An analysis of the history of Puerto Rican cuisine from first contact between Indigenous Taínos and Spanish explorers to present day Chicago-Puerto Rican cuisine. This thesis will examine the development of Puerto Rican national cuisine as part of growing nationalism in the late nineteenth century and again in the early twentieth century. As Puerto Rican migrants settle in Chicago, they bring their cuisine with them and Puerto Rican national cuisine changes in their new context to become Chicago-Puerto Rican cuisine. This new cuisine grows along with the Chicago-Puerto Rican community and is impacted by transnational forces as well as gentrification …

In January 1970, St. Louis Cardinals outfielder Curt Flood filed a suit against MLB Commissioner Bowie Kuhn, protesting the Reserve Clause in Major League Baseball that did not allow players the right to negotiate contract terms with any team but their current one. In doing so, he cemented his status as a divisive figure in baseball, the media, and with the general public. One of the primary reasons for such an extreme reaction was Flood’s rhetoric surrounding the case, as he repeatedly invoked slavery and other forms of peonage when describing the working conditions of professional baseball players. The automobile has long been directly and indirectly connected to human conceptions of nature, yet few studies linger with the act of driving as a practice that contributes to how nature is experienced. I argue that a more nuanced understanding of automobility is necessary for any scholars who study both social practices and environmental sustainability. Following the work of the human geographer Doreen Massey, I explore how relations between humans and non-humans, the social and the natural, ideology and practice work together to produce places specific to space and time. Traditional theories of nationalism tend to fall in one of two categories: 1) top-down, or official nationalism, which holds that nationalist sentiments are created by state actors, or 2) bottom-up, or popular, nationalism, which holds that nationalist sentiments originate with the people. However, there are major flaws in both of those theories, as well as a decent amount of overlap between them. This paper dismantles the supposed binary between these two theories, and looks for a way to view the theories in combination with one another. The combination of nationalism and colonialism has remained understudied in academia, despite the important interaction between the two phenomena. European ideas bled over into their colonial empires and began to fill the power vacuum created by colonial enterprises. This study analyzes the impact of British colonialism on the development of national identity in British India and Nigeria.

British influences included large scale economic disruption, cultural reform through ‘westernizing’ the population and abolishing local customs, and creating a new set of institutions to replace traditional power centers. Communities of color are disproportionately exposed to toxins and pollution. The environmental justice movement addresses the greater health and environmental risks experienced by minority groups. Although Asian Americans are the fastest growing population in the United States, there is little known about their involvement in the movement. In this thesis, I further observe Asian American involvement in the United States environmental justice movement. By analyzing community case studies, I identify Asian American-specific mobilization challenges and strategies. Interviews with prominent Asian American environmental justice activists reveal activism and collective identity are connected, but vary greatly according to individualized Asian American experiences. …

This thesis speaks to how historical and on-going colonization of the river has consistently traumatized the relationship disadvantaged communities have had with the Los Angeles River. By historicizing those relationships, I argue that current use of human-centered market-based strategies to revitalize the river only furthers serial displacement of disadvantaged communities and will not adequately achieve sustainability. Using Frogtown as a case study, I also explore methods of resiliency to “green gentrification," an agent of neocolonialism along the river. In studying the placemaking practices implemented in Frogtown, I problematize notions of gentrification as “natural” and "necessary" for river revitalization. Elements of …
