Appalachia, despite its rich history and abundant biological and cultural diversity, is commonly associated with a generalized notion of ignorance, resistance to progress, and "backwardness." This study aims to shed light on the socioeconomic, cultural, and environmental influences which have shaped the present food systems of Appalachia through a review of relevant literature. This history provides the necessary context to strategize a region-specific, socioeconomically and environmentally sustainable food system moving forward.

This thesis explores agricultural livelihoods in Harlan County with two case studies in order to challenge dominant narratives about Eastern Kentucky. Harlan County, and Appalachia more broadly, is often written about in terms of its relationship to extractive industries. Absentee landownership in Appalachia has been well documented, especially in the case of coal counties. However, the relationship between extraction and agricultural livelihoods in Appalachia warrants more attention. The story of agricultural livelihoods in the region is often pushed to the periphery much like the practices of “hillside” farming. Eating In Opposition: Strategies Of Resistance Through Food In The Lives Of Rural Andean And Appalachian Mountain Women, Veronica A. Limeberry

This thesis examines ways in which rural mountain women of Andean Peru and southern Appalachia use their lived histories and food knowledge in ways that counter Cartesian epistemologies regarding national and international food systems. Using women’s fiction and cookbooks, this thesis examines how voice and narrative reclaim women’s spaces within food landscapes. Further, this thesis examines women’s non-profits and grassroots organizations to illustrate the ways in which rural mountain women expand upon their lived histories in ways that contribute to tangible solutions to poverty and hunger in rural mountainous communities.
