Introduction: Food insecurity means lacking access to adequate, nutritious, and safe food. Collegiate food insecurity rates at ten Appalachian campuses range from 22.4% to 51.8%, and have been associated with unfavorable health and academic outcomes.

Purpose: This study compared cooking, dietary, and food safety characteristics of food secure (FS) and food insecure (FI) sophomores at a university in Appalachia in the context of the USDA definition of food security.

Methods: Data were collected using an online questionnaire. Descriptive and inferential procedures compared FS and FI sophomores (p < 0.05).

This study investigates adolescents' relationships with food and other community and household members' perceptions of youth and their food consumption to understand the multifactorial dynamic processes which create nutritional outcomes among urban and rural youth in central Tanzania. Youth are an important and demographically large population in developing countries. The identities created during this distinct stage of cultural production can be reflected in youths' food consumption and relationships with food. The Illawarra Healthy Food Basket (IHFB) was developed as one measure to monitor the affordability of healthy eating in Australia. It consists of 57 items selected to meet the nutritional requirements of a reference family of five. The basket was first costed in the Illawarra region of Australia in 2000 and again in 2001 and 2003. This study aimed to repeat the costing of the basket in 2005 and 2007 and to assess the trends in affordability since 2000.

Costing was carried out in the same five suburbs as previous surveys, utilising a large supermarket, greengrocer and butcher …
