Background: With increased obesity has come increased ready-made and fast food consumption and decreased homemade food consumption. Previous studies have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.

Objective: The objective of this project was to determine baseline SE and CF and the associations with dietary quality and body mass index (BMI) of youth enrolled in iCook 4-H.

This qualitative study assessed consumers’ current methods of determining portion sizing of chicken products and examined their perceptions of how effectively three package designs communicate portion size. Everett M. Rogers’ Diffusion of Innovations (DI) Theory analyzes the characteristics of the consumer of the innovation (adopter) and the impact these characteristics have on adopting new innovations. The innovation in this study will be the prototype packaging. Focusing on Rogers’ adopter characteristics and defined proprietary consumer segmentation characteristics, this study will be pivotal for future package design projects targeting nutrition education.

Entomopathogenic nematodes (EPNs) (genera Heterorhabditis and Steinernema) kill their invertebrate hosts with the aid of a mutualistic bacterium. The bacteria (Xenorhabdus spp. for steinernematids and Photorhabdus spp. for heterorhabditids) are primarily responsible for killing the host and providing the nematodes with nutrition and defense against secondary invaders. Photorhabdus is a Gram-negative bacterium in the Enterobacteriaceae family with high virulence towards their insect hosts. To achieve high mortality rates Photorhabdus produces a variety of virulence factors such as toxins, lipases, proteases, secretion systems, and fimbriae. The responses of two different commercial strains of broilers to diets varying in overall amino acid levels and metabolizable energy levels were observed. Amino acid levels used were 80%, 90%, 100%, 110%, 120%, and 130% of Ross recommended minimum digestable levels of essential amino acids. Energy levels used were either below or above Ross recommended metabolizable energy levels. Diets were fed for 56 days. The two strains were a fast growing broiler strain and a slower growing broiler strain. A selection of birds from each pen was processed at 35, 43, and 56 days of age. Studies have shown that many low-income and disadvantaged Americans have a poor diet quality, which increases obesity and chronic disease risk. According to the Massachusetts Department of Public Health, education and income levels of Springfield residents are well below state averages, and racial diversity in Springfield has increased significantly over the past few decades. Sports drinks provide nutrients that improve athletic performance. This study investigated whether a preference in taste leads to an increased consumption of a sports drink prior to and after an endurance event in athletes. Male amateur soccer players (n=16) first participated in a blind sensory evaluation to determine their taste preference for two (designated as Drink A and Drink B) similarly flavored sports drinks. Subjects were divided into two groups based on their taste preference for either drink. Calcium, vitamin D, fiber, and potassium are widely underconsumed in the U.S. This study analyzes nutrition information from quick service restaurants to determine the fast-food industry⁰́₉s contribution of these nutrients to the American diet. The menu offerings of top-grossing quick-service restaurants in each of seven categories, McDonald's℗ʼ (burger), Subway℗ʼ (sandwich), Taco Bell℗ʼ (Mexican), Pizza Hut℗ʼ (pizza), Chick-fil-A℗ʼ (chicken), Panda Express℗ʼ (Asian), and Long John Silver's℗ʼ (seafood), were analyzed for calcium, vitamin D, fiber, potassium, and calories. Today, 85% of corn, 93% of soybeans, and 88% of cotton in the U.S. are genetically modified (GM). Using laboratory methods, genes from one species, such as a plant, can be transferred to an unrelated species, such as an animal. Genetically modified crops may lead to higher yields, have improved food quality, texture, and nutritional value, and have an increased shelf life.

Despite these promising benefits, the potential health risks relating to the consumption of GM food remain inadequately assessed. Genetically modified food is not subjected to rigorous safety testing, such as epidemiologic studies, to identify potential health risks. Two …

Rationale: Diagnosis of autism has increased ten-fold in the last 40 years, and adults with autism remain an underrepresented population in research. Purpose: To qualitatively explore the relationship between eating behaviors and autism using a questionnaire and interviews with adults diagnosed with autism spectrum disorder. Methods: Four males aged 22-27 were interviewed with their mothers present and completed the Swedish Eating Assessment for Autism Spectrum Disorders (SWEAA). Interviews were analyzed through the process of open coding, and the questionnaires were analyzed to determine consistent findings between the interview and the SWEAA questionnaire. Herbivory requires animals to manage intake of toxic phytochemicals. Detoxification and excretion of these chemicals prevents toxicity, but is energetically expensive. I investigated the relationship between investment in detoxification and nutritional condition for moose on Isle Royale National Park (Alces alces) during winter, using urinary indices from urine samples collected in snow. The ratio of urinary urea nitrogen:creatinine is an indicator of nutritional condition, and the ratio of glucuronic acid:creatinine is an indicator of investment in detoxification. Nutritional condition declined with greater investment in detoxification. An alternative means of managing defensive chemical intake is to diversify the diet. Microhistological …

Cardiovascular disease is the leading cause of mortality in Western societies and is linked to multiple modifiable risk factors including lifestyle choices. Emerging evidence implicates exposure to persistent environmental pollutants, such as polychlorinated biphenyls (PCBs), as a risk factor for the development or progression of cardiovascular disease. Trends in qualitative community nutrition research demonstrate a powerful, emerging perspective in the midst of a field historically dominated by quantitative methods of inquiry. For this qualitative study, ten key respondents were purposively selected and interviewed using the Community Readiness Model (CRM) to capture community knowledge of food insecurity issues and strategies. Many different algal species can provide an acceptable protein ingredient, with good digestibility, for shrimp feeds. Compared to fish meal, similar protein, carbohydrate, and lipid levels can be found in select algal species. Traditional shrimp diets in aquaculture rely on fish meal and fish oil from pelagic fish fisheries. A reduction or elimination of these ingredients would reduce the dependency of shrimp aquaculture on offshore fisheries and increase economic competiveness. School gardens have existed since the late nineteenth century and today are becoming increasingly popular in many parts of the world, including where I studied in Maine and Australia (AUS). Multiple organizations support school gardens in Maine, including the Maine School Garden Network, which has over 125 registered school gardens. In AUS, the Stephanie Alexander Kitchen Garden Foundation primarily supports the school garden movement and has over 800 registered school gardens. The relationship between school lunch quality and the Healthy Hunger Free Kids Act (HHFKA) revised nutrition standards was investigated. School Lunches from four Washington State elementary schools that earned HealthierUS School Challenge awards. Nutrition content of the meals selected and consumed was assessed using before and after digital photos. Meals were scored using the Healthy Eating Index (HEI) to determine meal quality. Results were based on 1033 lunches (509 pre-HHFKA in Spring 2012 and 524 in Spring 2013) and revealed improved HEI scores for most components post-HHFKA implementation school lunches both served and consumed.
