Hemp (Cannabis sativa) L. microgreens were grown to 7 and 12 days with and without supplemental lighting and/or fertilizer. The principal macronutrient found in hemp microgreens was nitrogen (N), followed by potassium (K), phosphorus (P), magnesium (Mg), calcium (Ca), and sulfur (S). The principal micronutrient found in hemp microgreens was iron (Fe), followed by manganese (Mn), zinc (Zn), boron (B), and copper (Cu). Hemp microgreens were similar to other commonly grown microgreen species in minerals except for P and Mg, where they could potentially be an excellent source, and Zn, where they fell below previously reported amounts. Catfish skin (CS) contains considerable amount of protein that may be hydrolyzed enzymatically to generate hydrolysates (CSH) which may have antioxidant and antimicrobial properties. The generation of natural compounds with these properties is of special interest to the food industry. The objective of this study was to develop and characterize CSH including antioxidant and antimicrobial properties. CSH were produced from different enzymatic reaction periods using alkaline protease, and their characterization, antioxidant, antimicrobial, and some functional properties were evaluated. Bioactive compounds from different agricultural food products have attracted great interest from food industries and researchers for their health promoting functions such as antioxidant, antiaging, anti-inflammatory and anticancer performance. In this study, hydrophilic and lipophilic fraction of two economical agricultural products sweet sorghum millet and sweet potato, as well as two herbs, butterfly pea and basil were extracted. The profiles and contents of phenolics, fatty acids, tocopherols, carotenoids and phytosterols in these selected agricultural products were determined by chromatography and mass spectrum methods. Recalcitrant seeds, which die when desiccated, can be difficult to study because of their generally large size, high metabolism, and poor storage properties. However, recalcitrant seeds from the salt-marsh grass Spartina alterniflora are unique when compared to most other recalcitrant species because the seeds are dormant and small; Spartina pectinata and S. spartinae, which produce orthodox seeds, can be used as controls. Because of these somewhat rare characteristics, S. alterniflora is a good model system to study recalcitrance. The objective of this research was to evaluate color and tenderness in chilled or frozen pork loin chops after antioxidant dipping and modified atmosphere packaging. Loin chops were dipped in 0.3 M calcium chloride, 2.0 % sodium ascorbate, 0.2 M calcium ascorbate, or 0.3 M calcium ascorbate. Non-dipped chops served as controls. Chops were packaged in high oxygen (80% O2 / 20% CO2) or no oxygen (80% N2 / 20% CO2) and stored chilled (4° C) for 7 days or frozen (-18° C) for 21 days. After storage, chops were displayed under continuous fluorescent lighting for 3 or 6 days. …

Health benefits from consuming rice bran oil (RBO) have been extensively studied in humans. RBO has been shown to decrease cholesterol absorption by inhibiting the oxidation of the LDL-cholesterol. Gamma-Oryzanol is one of the RBO components that possess antioxidative properties; it is a polyphenolic compound resembling tocopherol (vitamin E), which is another component of RBO. There are evidences that oryzanol has potential applications for enhancing shelf-life of foods containing fats processed at a high temperature, decreasing the total cholesterol, LDL-cholesterol and triglyceride levels in plasma lipids, and healing ulcers. A mouse lymphatic endothelial cell (SVEC4-10) model and a human intestinal cell (C2BBe1) model in vitro were developed and capable to be used to study antioxidant activity, hypocholesterolemic capability and digestibility of γ-oryzanol. The critical and vital parameters in developing these cell models were the emulsion preparation of hydrophobic compounds for cell models, the consistent management of cell culture, and the selection of cell viability detection methods compatible with the cell lines and the test substances. An efficient procedure was developed and used to extract and purify isoflavones from defatted soy flour. The purity of the final product reached 94%. The antioxidant activities of soybean isoflavones (genistein and daidzein purchased from Sigma Chemical Co, and a mixture of isoflavone glycosides extracted from defatted soy flour) were investigated by a cholesterol oxidation model accelerated by 2,2’-azobis(2-methylpropionamidine) dihydrochloride (AAPH). All components exhibited very high antioxidant activities in the inhibition of cholesterol oxidation. Genistein had higher inhibition to the formation of 5,6beta-epoxycholesterol (5,6b-EP) and 7-ketocholesterol (7-keto), while no significant difference was found between the antioxidant activities of daidzein and …
