Choices And Preferences Of Vermont Master Gardeners - Do Socio-Demographics Matter?, Grace Matiru

ABSTRACT

This study was designed to characterize the choices, preferences and motivations of fruit and vegetable gardeners in Vermont, and to determine whether socio-demographic characteristics affect some of these choices, preferences and motivations. Using a survey of Vermont Extension Master Gardeners (EMGs), data were gathered over a 3-year period (2011-2013). The findings show most EMGs (>90%) garden in private home gardens, and the most popular vegetables grown were tomatoes, herbs, and salad greens. Beans, cucumbers and peppers sere also popular and among fruits, blueberries, apples, raspberries and strawberries were grown by over 40% of EMGs. Approximately 10% of EMG …

Rumen microbiota enable dairy cattle to breakdown fiber into useable energy for milk production. Rumen bacteria, protozoa, and fungi ferment feedstuff into volatile fatty acids (VFA), the main energy source, while methanogens utilize fermentation by-products to produce methane. Milk fat contains several bioactive rumen-derived fatty acids (FA), including odd-chain FA (OCFA) and branched-chain FA (BCFA), important for maintenance of human health. The overarching dissertation goal was to determine which factors affect rumen methanogen and protozoal community structures and their metabolism products, while defining relationships between rumen microbiota and animal performance. Food security research with resettled refugees in the United States and other Global North countries has found alarmingly high rates of food insecurity, up to 85% of surveyed households. This is well above the current US average of 12.7%. However, the most common survey tool used to measure food security status in the US, the US Household Food Security Survey Module (HFSSM), has not been sufficiently validated for resettled refugee populations, leading to the risk that the HFSSM may actually be underestimating the prevalence of food insecurity among resettled refugees in the US. Stocking density serves as a sub-clinical stressor impacting natural behavior and affective state of dairy cows. However, cows rarely experience stocking density as an isolated stressor. Understanding the effects of stocking density with additional management stressors such as low-fiber diets or feed restriction is the next step in alleviating stress and improving the well-being of lactating dairy cows housed in freestall barns. The overall goal of this dissertation was to evaluate the interaction of stocking density and the feeding environment on short-term production, behavioral, ruminal fermentation, and stress responses of lactating dairy cattle.

The rural-urban interface (RUI) is a complex landscape impacted by a variety of social and economic processes. Substantial U.S. agricultural production occurs at the RUI despite non-farm development pressure. Notably, at a time when U.S. farming is increasingly dominated by a shrinking number of large scale operations, RUI agricultural production occurs primarily on small and medium farms. Importantly, RUI farms exhibit greater diversity in terms of operator demographics, production type, and marketing channels, than their large-scale counterparts.

Ensiling is one of the most common processes used as a conservation method for forages on farms and plays an important role in farm economics. Therefore, with the aim to improve the conservation and the nutritive value of silage, the utilization of silage additives such as fibrolytic enzymes (FE) and lactic acid bacteria (LAB) inoculants has been a common on-farm practice. FE are enzymes capable of breaking down complex polysaccharides such as cellulose and hemicellulose. Consumer awareness of the link between dietary fats and health outcomes has led to increased demand for food products enriched with bioactive fatty acids (FA). Ruminant-derived fats, such as dairy fats, contribute significantly to the American diet and contain many unique beneficial FA, such as short- and medium-chain FA, n-3 FA, conjugated linoleic acids (CLA), vaccenic acid (VA), as well as odd-and branched-chain FA (OBCFA).
