To continue to meet the demands of increasing food production and environmental sustainability, new strategies are needed to enhance the efficiency of finishing cattle production. A review of the literature identified several nutritional and physiological constraints that limit the ability for cattle to digest starch and absorb glucose from the small intestine. Comparative sequencing analyses revealed a missing region of the sucrase-isomaltase protein which could affect the capacity for starch digestion in cattle. Post-flaking sampling and handling recommendations were generated based on a series of experiments to improve estimates of starch availability and flaking consistency for commercial feedlots and laboratories. …

Detection of individual differences in personality traits of animals may prove beneficial for producers to help tailor management for individuals and to make selection decisions. Therefore, the objectives of this thesis were to

1) review and evaluate literature on relationships between individual cattle personality traits and feeding behavior, activity, and performance; and

2) evaluate and develop tests suitable for characterizing crossbred dairy-beef calves’ personalities and associations with behavioral patterns and performance.

Grass cell walls are rich in cellulose, hemicellulosic arabinoxylan (AX) polysaccharides, and lignin. AX structural differences such as degree and pattern of branching and the ester-linked phenolic acid content could affect plants’ digestibility when used as forage for livestock. However, there is little information about how these structural elements change over the growing season in the vegetative tissue of cool-season perennial grasses. Programmed Nutrition Beef Program (Alltech Inc.) is a dietary supplement that contains Aspergillus oryzae fermentation extract with α-amylase activity that could reduce the use of feed additives such as monensin and tylosin in conventional feedlot diets. This study examines the changes in rumen fermentation resulting from feeding monensin/tylosin and Programmed Nutrition Beef Finisher. The goal was to determine if these shifts in rumen fermentation contribute to the Programmed Nutrition response observed in vivo. Experiment 1 tested the hypothesis that ad libitum consumption of a 1:1 blend (MIX) of sodium selenite (ISe) and SELPLEX vs solely ISe as selenium (Se) supplements (27 ppm) in a vitamin-mineral mix (V-M) by steers subjected to summer-long grazing of toxic endophyte-infected tall fescue (TE) would ameliorate the negative effects of TE by positively affecting the expression pattern of prolactin (PRL) and NF-kB pathway genes by circulating leukocytes (WBC). Leg problems and disorders are of major concern for the poultry industry and animal welfare. Previous studies suggest that it may be possible to improve skeletal characteristics through nutrition. Omega-3 fatty acids, including Docosahexaenoic acid (DHA), are essential nutrients and are known to play an important role in bone tissue development. FORPLUS™ (Alltech, Inc.) is an unextracted, whole-cell microalgae (Aurantiochytrium limacinum CCAP 4087/2) that contains 64% fat and 16% DHA. The effects of dietary ingredients on the proteome profile of postmortem beef longissimus lumborum (LL) muscle were evaluated. In the first experiment, the influence of dietary ractopamine on the whole-muscle proteome of beef LL was examined. Five proteins were differentially abundant between ractopamine-fed (RAC) and non-ractopamine fed (CON) groups. The differentially abundant proteins were over-abundant in RAC and were related to muscle structure development (F-actin-capping protein subunit beta-2 and PDZ and LIM domain protein-3), chaperone (heat shock protein beta-1), oxygen transportation (myoglobin), and glycolysis (L-lactate dehydrogenase A chain). Precision dairy monitoring is used to supplement or replace human observation of dairy cattle. This study examined the value dairy producers placed on disease alerts generated from a precision dairy monitoring technology. A secondary objective was calculating the accuracy of technology-generated disease alerts compared against observed disease events. A final objective was determining the economic viability of investing in a precision dairy monitoring technology for detecting estrus and diseases.

Threonine has been reported to be the second limiting amino acid in typical equine diets, but its actual requirement has not been determined in horses. The indicator amino acid oxidation (IAAO) method has been successfully used for evaluating amino acid metabolism and requirements in animals and humans. Poor estrus detection can limit the reproductive performance of a dairy herd. One objective of this research was to evaluate an alternative method to traditional estrus detection in the form of automated monitoring technologies. Effects Of Post-Hatch Holding Time And Early Nutrition Strategies On Growth Performance, Carcass And Skeletal Characteristics Of Young Chickens, Marquisha A. Paul

The study objectives of this thesis were to evaluate the effects of delayed feeding and specific aspects of the Programmed Nutrition (PN) feeding strategy (Alltech, Inc.) on growth performance, carcass characteristics, and skeletal characteristics of commercial broiler chicks through market age, as well as investigate the effects of breed and the PN feeding strategy on early growth and development. When commercial broiler chicks were fed reduced nutrient diets, delayed feeding decreased early growth performance and carcass yield (P<0.05), whereas post-hatch PN conditioning for 72 hours improved early growth performance and alleviated the negative effects of delayed feeding on carcass yield (P<0.05). Through market age, delayed feeding improved Gain: Feed (P<0.05), while PN had the opposite effect. Interactive effects and main effects of delayed feeding and PN were observed for tissue mineral concentration (P<0.05). PN lowered bone ash % (P<0.05) and increased meat oxidation of broiler chicks during storage (P<0.05). PN also had negative effects on early growth performance and bone breaking strength (P<0.05) of various meat-type breeds, but especially for non-commercial, moderate-growing or fast-growing breeds. In conclusion, PN may be suitable for commercial broiler chicks that experience delayed feeding and are fed reduced nutrient diets.

Precision dairy farming technologies provide a variety of functions to dairy farmers. Little is known about dairy producer perception of these technologies. A study was performed to understand dairy producer perception of parameters monitored by precision dairy farming technologies. Lameness and mastitis are the two most costly diseases in the dairy industry. Reduction of these diseases through housing and management is beneficial. Compost bedded pack (CBP) and sand freestall barns were compared in a long-term, on-farm study to assess the effect of housing on each disease. HACCP-based food safety programs have been widely acclaimed, accepted and implemented as an effective means of managing food safety risks. While HACCP training is a cornerstone of managing HACCP programs, there is little information about the effectiveness of HACCP training and the durability of HACCP knowledge. Findings reveal a link between involvement level in HACCP activities and the accuracy of HACCP knowledge over time.
