The production of leafy green vegetables through aquaponics is established worldwide, but the production of herbs which are used in day-to-day life in the United Arab Emirates is not yet explored in this system in terms of production efficiency, water usage and the nutrient parameters. Irrigation of date palm (Phoenix dactylifera) with saline groundwater is routinely practiced in the arid agroecosystems of United Arab Emirates (UAE), due to freshwater scarcity. Saline groundwater irrigation is known to deposit salts in the top layers of soil and increase soil salinization. However, how increasing soil salinization affects the belowground bacterial communities, is not well investigated. Soil samples were collected from 14 different date farms where irrigation water source was either non–saline water or saline groundwater. A study was conducted to evaluate the performance of Ocimum basilicum L. in both aquaponic and soil systems in the UAE climatic condition. The experiments were conducted under greenhouse conditions. Plants were raised in aquaponic beds with ornamental fishes in different concentrations. At the same time, a set of plants were raised in pots under a greenhouse set-up. Various techniques including tray drying, freeze-drying, vacuum drying, microwave drying, convection drying were tested for their ability to dry the dates sufficiently to produce a dated powder. Hyperspectral imaging (HSI) is a non-destructive analytical tool that can be used for sensing multiple attributes of foods. This thesis evaluates the application of HSI for measuring the freshness of the mushroom Agaricus bisporus (A. bisporus) in comparison with traditional seed methods. Three separate experiments were performed with 135 mushroom samples stored either in packed or unpacked conditions for 11 days. The overall results suggest that the HSI spectral region between 400 and 1000 nm is suitable for the inspection of mushroom freshness. The concentrations of biochemicals and antioxidant compounds, activities of antioxidant enzymes with their isoenzyme profiles, endogenous phytohormone contents were studied from preflowering, flowering, and post-flowering stages. Two varieties each from early (Shaham, Khanezi), mid (Barhee, Nabthasaif) and late (Khasab, Fardh) flowering types were used in the study. Sudan grass (Sorghum x drummondii) is commonly grown for the production of animal fodder in the UAE. Cyperus conglomeratus (locally termed ‘Thenda’) is a sedge native to the UAE, and one of the very few plants that colonize soils of shifting desert dunes. The native plant is grazed by camels, and may thus have a potential for animal feed production.
