Performance pressures and emphasis on body weight and shape put collegiate athletes at risk for disordered eating. If not identified early, disordered eating behaviors could develop into a clinical eating disorder. While such behaviors are a known problem, prevalence rates are not well established in collegiate athletes. Disordered eating may also relate to physiological changes in athletes, such as body composition and performance, although this relationship is not well understood. Food insecurity is defined as a lack of access to enough food for a healthy lifestyle and has been found to lead to higher prevalence of type 2 diabetes (T2DM). Consumption of food away from home is associated with higher caloric intake and poorer diet quality compared to home-cooked food. The advance quantity meal prep (AQMP) program is a group-based program developed to increase the frequency of consumption of home-cooked meals. The AQMP pilot study was a pre-experimental 6-week intervention aimed at analyzing the effects of the program on frequency of consumption of home-cooked meals, cooking attitudes, cooking self-efficacy, and anthropometric measures. Chinese dietary therapy has been documented to date back at least 4000 years (Zhang, 2012). The aim of traditional Chinese dietary therapy was to maintain health by achieving the balance of Yin, cold or cool, and Yang, hot or warm, components in human bodies through having a Yin-Yang-balanced diet. Yin foods were to expel heat syndromes, such as constipation, caused by excessive Yang (heat), while Yang foods were to treat cold syndromes, such as fatigue, caused by excessive Yin (coldness). Four experiments were conducted to evaluate the interrelationships among coccidiosis vaccination and nutrient utilization in floor-reared broiler chickens. Experiment 1 longitudinally compared the effects of coccidiosis vaccination and a chemical coccidiostat on broiler performance, nutrient digestibility, and intestinal morphology. Coccidiosis vaccination had no significant impact on morphology, overall body weight gain and feed intake of vaccinated birds, although vaccination impaired overall FCR. Vaccination elicited a transient reduction in digestibility of energy and nutrients, particularly for lipids, but vaccinated birds were able to recover from these reductions by 20 d. To evaluate increasing levels of sodium butyrate (SB) in nursery diets on growth performance (Experiment 1 & 2), complete blood cell count (Experiment 2), and the optimal level of fermented soybean meal for maximum performance in weanling pigs (Experiment 3), weaned pigs were blocked with initial body weight (BW) and allotted to dietary treatments. Treatments were: 1) Control (C) moderately complex corn-soybean-meal based supplemented with 0.05% benzoic acid (BA), but devoid of SB; C diet supplemented with 0.05%, 0.10%, or 0.15% SB (Experiment 1). Trace minerals, particularly copper, zinc and manganese, play a role in ensuring optimal immune function. To examine the effects of diets containing different levels and sources of trace minerals on the inflammatory response, Cobb 500 broilers were fed four experimental diets containing 5 mg/kg Cu and 45 mg/kg of Zn and Mn or 10 mg/kg Cu and 90 mg/kg Zn and Mn in either the sulfate or hydroxychloride form. Lifestyle interventions (nutrition and exercise) offered during pregnancy may prevent excessive gestational weight gain (EGWG) and improve pregnancy outcomes. The efficacy of previous interventions has been inconsistent as some studies ‘successfully’ achieve their health outcome goals while others have had a null effect. A common limitation reported among ‘unsuccessful’ studies is low adherence. The objective of this dissertation was to execute three independent yet interrelated studies to determine if adherence is a key factor in determining the success of a lifestyle intervention during pregnancy. This dissertation examined the dimensions of food access and its effects on food selection for individuals enrolled in the Supplemental Nutrition Assistance Program (SNAP); low-income senior citizens; and recipients of the Women, Infants, and Children (WIC) benefit. This study investigated the use of the Link Up Illinois Double Value SNAP Nutrition Incentives Program (DVCP), a coupon with which recipients can receive twice as much fresh produce when redeemed at a farmers market. Background:Childcare settings play an important role in shaping young children’s eating, physical activity (PA), and screen time (ST) behaviors. However, little research has focused on family childcare homes (FCCHs). This paper examines family child care provider (FCCP)-reported attitudes and perceived barriers related to nutrition, PA, and ST of preschool aged children in their FCCH, exploring differences by provider ethnicity.

Methods:We used baseline data from an ongoing cluster-randomized trial including surveys with FCCPs. Yerba mate, Ilex paranguariensis, is a shrub commonly found in the Atlantic Forest of South

America which covers part of northeast Argentina, eastern Paraguay, and southern Brazil. The

dried leaves and stem of the tree are used to make an infusion, called mate, used first by indigenous

Guaraní people. Today, yerba mate is widely consumed in the Southern Cone region and is

regarded as the national drink of Argentina, Paraguay, and Uruguay. I argue that yerba mate has

entered the U.S. as a “superfood,” marketed as a product with nutritional and symbolic medicinal

The diet quality was analyzed for people living in New Zealand and people living in other Westernized Countries (United States, Canada, Western Europe) based on the dietary guidelines. Diet quality was analyzed by looking at consumption of food groups such as fruits, vegetables, meat, and seafood as well as nutrients such as saturated/trans/unsaturated fat, sodium, and added sugars. Products with health-related claims that are perceived to be tasty are more likely to be purchase by consumers than products without a claim. PURPOSE:Muscle soreness levels and hydration status are important indicators of recovery from high intensity endurance exercise, and can be influenced by post-exercise nutrient intake. Chocolate milk has been reported to be an effective recovery beverage in adults, as it contains carbohydrate, protein, and water/electrolytes at levels that are appropriate for refueling, muscle repair, and rehydration. However, few studies have tested the efficacy of chocolate milk for post-exercise recovery in adolescents. Background: The Neighborhood Produce Market (NPM) is a food distribution model similar to a mobile food pantry. NPM stakeholders observed a lack of community engagement and familiarity with produce offered.

Project Description: The objective was to develop a nutrition education curriculum for NPM volunteers to better engage families and community members by providing food samples, recipes, and nutrition education.
