This dissertation sought to critically analyze the university environment by examining how the representation practices of corporations articulate with the growing obesity epidemic. For this study, existing data from one southeastern university was collected to describe the articulation between the university and obesity. The analysis examined the collected information and used the cultural studies concept of representation to expose the articulation between obesity and the university setting, including the three major theoretical works of Martin Nestle, Henry Giroux, Michel Foucault, and Paulo Freire. This study examined the factors that affected parent's decision for putting their autistic children on a gluten free casein free diet (gfcf diet). Parents completed a fifteen question survey relating to multiple factors affecting their lives while having their children on a gfcf diet. In addition, parents were asked to fill out a three day diet history for their child for a nutrient analysis.;Fifty three surveys (21%) and ten diet histories were returned. Efficacy Of A Nutrition Education Program Designed For Grades K-3 Piloted In Johnson County Schools., Allison Nicole Lowry

The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.

Humic substances are reported to improve plant growth and nutrient uptake, with iron the most studied nutrient. The most common forms of iron in soils are iron oxides, which are stable under aerobic conditions and unavailable for plant uptake. Iron deficient plants become chlorotic, which reduces growth and yield. To determine if humic substances can reduce iron chlorosis, five commercially available organic acids were tested on maize grown in sand columns at high pH. For the past decade, Florida’s Latino population has significantly increased and is now the third largest in the United States. The same trend has also occurred in Hillsborough County. Social and economic disparities are significant as Latinos earn less than non-Hispanic whites and many live in poverty. A major concern of this population is the lack of access to inexpensive fresh fruits and vegetables.
