This study was conducted to increase our understanding of the influence of adult female pronghorn (Antilocapra americana) physiology on fawn summer survival. Pronghorn are a valued big game animal in Idaho, but are particularly sensitive to capture; therefore, we designed a noninvasive fecal sampling study to measure pregnancy (progesterone and estrogen), diet, nutrition (fecal nitrogen and DAPA), and stress (cortisol), during metabolically-demanding female life history stages (late gestation, early lactation, and breeding season). We also compared survey results between ground and aerial methods within mountain valley landscapes.

Changes In Healthy Eating And Physical Activity Behaviors Of Adult Participants In Create Better Health's Education (Snap-Ed) Program, Kami Bullock

The purpose of this study was to compare the effects of delivery method on the nutrition, food resource management (FRM), and physical activity behavior of participants enrolled in either Create Better Health’s in-person or online courses. The pre-survey and post-survey included data on nutrition, FRM, and physical activity behaviors. The researcher analyzed preexisting data from 138 SNAP-eligible adults who participated in Create Better Health’s online and in-person courses.

Results showed similar improvements in most of the nutrition and physical activity behaviors among those who took the CBH courses online or in-person. The online course showed statistically higher scores for four …

When animals don’t have enough food, they have to “choose” between “spending” their limited energy on themselves or on their offspring. Biologists think that reptiles can make this choice quickly in response to different environments. Orofacial clefts (OFCs) are facial malformations that happen during early pregnancy and have a complex and heterogeneous etiology, involving both genetic and environmental risk factors. This project examined the association between maternal nutrition, folate-related biomarkers, candidate genes involved in one-carbon metabolism (OCM), and OFCs in order to achieve more comprehensive knowledge of how nutrition and genetics influence OFC risk. Each year approximately 73,000 refugees are resettled into the United States because it is unsafe for them to return to their country of origin. Resettlement agencies help refugees learn about their new environment and provide assistance with housing, food, English classes, and job skills training. The goal of resettlement programs is to help refugees become self-sufficient as quickly as possible.

This study aimed to implement and assess a school-based multi-component intervention aimed at increasing elementary school-aged children's knowledge of, preference for, and intake of vegetables. The multi-component intervention included lunchroom exposure, nutrition curriculum in the classroom, after school program vegetable curriculum, family friendly nutrition newsletter, vegetable fair and parent cooking class. Lunchtime vegetable consumption was assessed by direct observation. Changes in preference, attitude, and knowledge were assessed using a pre- and post-intervention survey.

This study includes data collected from a retrospective chart review of patients with phenylketonuria treated at the University of Utah Metabolic Clinic. Among the
approximately 175 patients treated for phenylketonuria at this clinic, 55 patients (28 female) met the inclusion criteria for the present study. Based on the diagnostic Phe
level, 66.7% were classified as having classic phenylketonuria, 18.5% with moderate phenylketonuria, and 14.8% with mild phenylketonuria.

Humic substances are reported to improve plant growth and nutrient uptake, with iron the most studied nutrient. The most common forms of iron in soils are iron oxides, which are stable under aerobic conditions and unavailable for plant uptake. Iron deficient plants become chlorotic, which reduces growth and yield. To determine if humic substances can reduce iron chlorosis, five commercially available organic acids were tested on maize grown in sand columns at high pH. The purpose of these studies was to further research on bone density in children with cystic fibrosis, particularly as it pertains to nutritional parameters and care. The first paper presented a comparison of a group of 50 children with cystic fibrosis to a group of 32 control children. There were no significant differences between the groups in any of the pertinent bone density measurements. Serum 25(OH) vitamin D was positively correlated with spine density z score in the cystic fibrosis group.

The primary intent of this study was to ascertain the effectiveness of parents in the role of teaching nutrition to their children. This research endeavor was an extension of refinement of a three-year program in nutrition education in the Department of Family and Human Development at Utah State University. Halogeton glomeratus (M. Bieb) C.A. Mey when grown in nutrient solution, caused the solution pH to decrease very rapidly as plants increased in size, especially during the fifth week of growth. This might be attributed to hydrogen ion exchange for cations. Also, the cation uptake, especially K and Na, may exceed that of the major anions. The control of pH is effective in increasing shoot weights markedly.

Three bean varieties, namely, great northern, kidney, and pinto (Phaseolus vulgaris L.), were subjected to several physico-chemical treatments to reduce their cooking time. Soaking in a combination of salt solutions (sodium chloride, 2.5 percent+ sodium bicarbonate, 1.5 percent+ sodium tripolyphosphate, 1.0 percent + sodium carbonate, 0.5 percent) resulted in 80-85 percent reduction in cooking time. Irradiation (Γ-rays) at 500 Krads of soaked and dehydrated beans caused nearly 50 percent reduction in cooking time. High temperatures (37 and 45°C) and pH (9.0) caused greater water imbibation and total solids loss than room temperature (22°C) and pH 7.0. Organoleptic evaluation of beans …

The objectives of this investigation have been to study the acceptability and nutritive value of processed cabbage and to elucidate the effects of chronic administration of cabbage on the activity of a colon tumorigen, 1,2-dimethylhydrazine (DMH). The organoleptic unacceptability of cabbage in spite of its high nutritional and economic values governed the choice of this cruciferous vegetable for this work.

A study of mule deer occupying deer management units 53 and 54 in south central Utah was conducted from August, 1971 to May, 1974 to determine food habits, caloric requirements, dietary nutritional levels, and productivity. Transects, fecal analyses, weight data, classification counts, and forage analyses were used to accomplish these objectives.

Food habits of deer on the two units were similar, except for higher use of scrub oak on unit 53 and higher use of snowberry on unit 54.

Deer on unit 54 were significantly larger than those on unit 53. Thus, their caloric requirements also were significantly higher.

The purpose of this study was to evaluate a six week nutrition program in terms of its effect on nutrition knowledge and its effect on food practices and attitudes. A survey of the dietary food intake was also made. Fifth grade students in Granite School District, Salt Lake City, Utah, were the participants. A pretest and a postest were used to determine the effect of the program. A study on the influence of nutrition education experiences was conducted in the Child Development Preschool Laboratory at Southern Utah State College in Cedar City, Utah, with thirty-two preschool children. Sixteen of the children were exposed to nutrition experiences through food activities and stories.

It was found that the sixteen children who were involved in the fifteen nutrition experiences significantly increased their knowledge of nutrition concepts and further modified their own personal food choices. The control group, which was not exposed to nutrition activities, made no significant change in knowledge of nutrition concepts and no modification of personal food choices. …

Sheep with esophageal fistulas were used to determine the daily intake, nutritive content and digestibility of forage at three periods and two stocking intensities during the spring of 1972 on a typical foothill range in northern Utah.

Heavy grazing under a season-long regime did not influence the concentrations of dietary chemical components when compared to moderate grazing; however, it did depress the digestibility of cellulose and organic matter. There was a significant decline in the dietary chemical components due to forage maturation. Digestibility of organic matter and cellulose were significantly higher in the early spring as compared to late spring. …

A comparative index to digestible nutrients was established for Russian wildrye, crested wheatgrass, and intermediate wheatgrass seeded on foothill areas of Utah. The nutritive values of these grasses were compared by the lignin ratio method, the chlorophyllan ratio method, and the in vivo rumen bag process.

Average digestion coefficients computed by the lignin ratio method for dry matter, ether extract, cellulose, and gross energy were highest for intermediate wheatgrass. Protein was more digestible for Russian wildrye. Digestible energy was adequate in all species to meet requirements for late lactation.

The 65 million acres of winter range in the Intermountain region furnish forage for about five million sheep and four million cattle each winter for approximately six months. These arid ranges are well suited for winter grazing, and are of paramount importance to the livestock industry. Many of these ranges were fully stocked by 1900 and as livestock continued to increase, many winter ranges were seriously over-grazed (Hutchings and Stewart, 1953). Today many of these ranges remain in a deteriorated condition. Forage production has decreased and desirable plants have been replaced by less desirable species.
