Food Quality Control Methods Used In Nursing Homes And Hospitals Of 100 Beds Or Less In Kentucky And Tennessee, Laura Lee Butler Dec 1983

Food Quality Control Methods Used In Nursing Homes And Hospitals Of 100 Beds Or Less In Kentucky And Tennessee, Laura Lee Butler

Doctoral Dissertations

In 1981 nursing homes and hospitals with less than 100 beds in Kentucky and Tennessee represented approximately 50% of the total number of these facilities. Little attention has been given in the professional literature to health care facilities of this size. Many small facilities have not employed persons with specialized education and training to manage the foodservice; thus food quality control methods may not be used. Research is needed to identify existing areas of quality control in order for needed improvements and changes to be made. The purposes of this study were to identify and compare current quality control measures …

An Experimental Study Of Temperature Separation In Swirling Flow, Hiromoto Kuroda Dec 1983

An Experimental Study Of Temperature Separation In Swirling Flow, Hiromoto Kuroda

Doctoral Dissertations

The objective of the present investigation is to substantiate the mechanism of acoustic streaming; this was carried out by conducting detailed internal surveys of a Ranque-Hilsch swirling flow test rig at the condition when the vortex whistle was attenuated or excited. This control of the vortex whistle was accomplished by two methods.

In the first method where the vortex whistle was attenuated by placing a restriction at the exhaust, a Rankine vortex was observed to form, accompanied by an almost uniform total temperature distribution in the radial direction except for a dip near the vortex core; when the vortex whistle …

Spent Mushroom Compost As A Soil Amendment For Vegetables, Sherry H. Wang Dec 1983

Spent Mushroom Compost As A Soil Amendment For Vegetables, Sherry H. Wang

Doctoral Dissertations

Spent mushroom compost (SMC) was obtained from Ralston Purina Mushroom Plant in Loudon, Tennessee to determine its effects as a soil amendment for growing vegetables under field conditions. Four rates (0, 2, 10, and 20 kg/m2) of SMC were applied to a Sequatchie fine sandy loam in 1981 and 1982. Yields of cabbage, cucumber, mustard, onion, radish, snap bean, spinach, and tomato were evaluated.

Spent mushroom compost application decreased the bulk density, increased the percentage of small pore space, pH, and electrical conductivity. Within the year of 1981 or 1982, the difference in the response of vegetable yield …

Effects Of Soybean-Wheat Cropping And Tillage Regimes On Nematode Population And Community Dynamics, Sonya M. Baird

Masters Theses

Increased utilization of conservation tillage and cropping pro-grams has necessitated a better understanding of nematodes in these programs. This study was undertaken to better characterize the nematode community structure in various soybean-wheat cropping and tillage regimes, and to assess the effects of these regimes on nematode com-munity and population dynamics. Sample plots were located at Spring Hill and Milan, Tennessee, and were arranged as randomized block designs with five treatments at each location. Soil samples were taken in May, July, and October, 1982. Nematodes were extracted from 100cm3 aliquants by means of a sugar flotation-centrifugation technique, and identified to …

Occurrence Of Acremonium Coenophialum In Tennessee, Elizabeth A. Long Dec 1983

Occurrence Of Acremonium Coenophialum In Tennessee, Elizabeth A. Long

Masters Theses

Tall fescue (Festuca arundinacea Shreb.) plants were collected throughout Tennessee to determine the incidence and distribution of the fescue toxicity fungus, Acremonium coenophialum (Morgan-Jones and Gams). Eighty-three percent of the counties in Tennessee were sampled by taking two fescue plants from each of three different locations in each county, for a total of six fescue plants per county. An enzyme-linked immunosorbent assay (ELISA) was used to test for the presence of the fungus. This serological technique can be completed in two days and can be more quantitative for the amount of fungus present in fescue tissue than can be determined …

The Effect Of Temperature, Initial Moisture Content, And Level Of Inoculum Of Aflatoxin And Ochratoxin Production In Corn, David Carter Mobley

Masters Theses

Mycotoxin contamination of grains can occur as a result of invasion by field fungi or by growth of storage fungi in improperly stored crops. Environmental factors and competing mycoflora can affect fungal growth and mycotoxin production. Since mycotoxins pose a potential health hazard to both man and animals, this study was conducted to evaluate combinations of temperature, initial moisture content (MC), and level of inoculum during storage of corn to determine optimal and limiting conditions for aflatoxin and ochratoxin production during fungal competition and growth in pure culture. Two fungi were used in this study, Aspergillus parasiticus NRRL 3145 and …

Doctoral Dissertations

A total of 285 observations from 72 beef cows and 117 yearling cattle were used to determine relationships of cattle characteristics such as body weight, height, length, width, depth, fatness, level of milk production and gestation length with diet intake, nutrient digestibility and digestible nutrient intake. Digestibility was determined using acid-insoluble ash as an internal indicator. In one study, five observations per cow were obtained as the physiological functions of these animals were changing. Cows were fed grass silage while yearlings were fed corn silage plus concentrates. Relationships were determined using multiple regression techniques.

In beef cows, body weight was …

Plasma Cortisol And Progesterone Concentrations, Uterine Proteins And Corpora Lutea Lh/Hcg Binding Characteristics In Gilts Following Adrenocorticotropin Or Hydrocortisone Acetate Administration During Diestrus, Joan R. Hembree Dec 1983

Plasma Cortisol And Progesterone Concentrations, Uterine Proteins And Corpora Lutea Lh/Hcg Binding Characteristics In Gilts Following Adrenocorticotropin Or Hydrocortisone Acetate Administration During Diestrus, Joan R. Hembree

Masters Theses

In a preliminary study four gilts fitted with jugular cannula were injected once or twice daily with either 2 mg hydrocortisone acetate (HA) in sesame oil per kg body weight, intramuscularly (IM) or 1 I.U. adrenocorticotropin (ACTH) in 14% gelatin per kg body weight, subcutaneously (SQ). Twice daily injection of ACTH significantly elevated (P<.05) plasma cortisol levels above that of the control animals (injected with 2 ml sesame oil, IM and 2 ml 14% gelatin, SQ, twice daily). Hydrocortisone acetate did not significantly elevate cortisol levels, although a second injection appeared to elicit a heightened cortisol response. Twenty-three gilts were assigned to the following treatments administered twice daily at dosage levels established in the preliminary study; (1) nonbled control; (2) bled control, injected with the hormone carriers; (3) HA; and (4) ACTH. Treatments were administered days 2 through 7 (period one) or days 8 through 13 (period two) of the estrous cycle, with plasma samples collected daily during treatment and ovariectomies performed and uterine flushings obtained the day following the final day of treatment. For both periods of treatment ACTH decreased and HA increased cortisol levels in a linear fashion over the days of treatment compared to the quadratic response of the bled controls. Within period two both HA and ACTH treatment resulted in a linear increase in progesterone levels compared to the quadratic pattern of the bled controls; however, there was no significant effect of treatment upon progesterone profile compared to the controls in period one. There were no significant differences between the nonbled and bled controls for any of the day 8 or 14 parameters measured, therefore the controls were pooled by period and all comparisons made relative to these pooled controls. There were no differences due to treatment detected within period one for either total uterine proteins or corpora lutea (CL's) luteinizing hormone/human chorionic gonadotropin (LH/hCG) receptor binding affinity or capacity. Within period two ACTH treatment reduced (P<.05) uterine proteins compared to the pooled controls, whereas HA had no effect. There was a trend (P<.10) for day 14 CL's LH/hCG receptor binding affinity to be reduced by HA and ACTH treatments although binding capacity was unaffected. Corpora lutea LH/hCG receptor binding affinity and capacity were negatively (P<.05) correlated. Based upon these data, mid- to late diestrus appears to be a physiological state sensitive to the HA and ACTG treatment used in this study. Total uterine proteins were reduced by ACTH treatment, which suggests that the uterine environment was altered. Since a proper uterine environment is essential for the survival of many embryos, alteration of uterine proteins by ACTH may effect embryonic survival.

Women's Sports And Physical Education At The University Of Tennessee: 1899-1939, Adam R. Hornbuckle Dec 1983

Women's Sports And Physical Education At The University Of Tennessee: 1899-1939, Adam R. Hornbuckle

Masters Theses

Sports historians have demonstrated that the early twentieth century, particularly the 1920s and the 1930s, was a period of both increasing and decreasing opportunities of women to participate in skilled and competitive athletics. Most would agree that a philosophy of anti-competition and universal participation as advocated by the Women's Division of the National Amateur Athletic Federation (WDNAAF) steered women's collegiate sports and physical education during the period. However, they disagree over the extent of the application of that philosophy and its effectiveness once put into practice. While examining the development of women's sports and physical education at the University of …
