Market demand for instant rice--a processed form of rice that is cooked and dehydrated before it is sold--has risen tremendously and become a significant component of the rice industry. Compared to freshly cooked rice, the quality of instant rice (in terms of texture, color, aroma, etc.) is much lower. There exists little information regarding how instant rice’s storage conditions affect its quality. Such information may be elucidated by studying sorption isotherms which describe the storage temperature, relative humidity, and instant rice moisture relationships.

Securing the microbial safety of rice is a rising priority within the food industry, especially when used as an ingredient to manufacture ready-to-eat, minimally-processed products. Mold contamination is typically the most problematic for rice because certain species of Aspergillus produce toxic secondary metabolites known as aflatoxins, rendering the grain unfit for human and animal consumption. Conservation of animal populations requires knowledge of their habitat and spatial needs. Quantifying spatial requirements involves the analysis of home range. We examined the effects of sex, body size (SVL), body condition (log mass/log SVL), and year on home range in Timber Rattlesnakes (Crotalus horridus) in Northwest Arkansas. Individual locality data from an ongoing, 22+ year radio-telemetry study in Madison Co., Arkansas were analyzed using both minimum convex polygon (MCP) and Kernel Density Estimates (KDE). This thesis examined the influence of social and structural communication variables on the perceived social connectedness of people experiencing homelessness in the Northwest Arkansas (NWA) and Joplin, Missouri areas. This study employed the ecological perspective of communication infrastructure theory (CIT; Ball-Rokeach et al., 2001) and a communication perspective which envisions communicative interaction as constitutive of social experience. Using survey data from 166 participants, this study examined 11 research questions and hypotheses drawn from extant literature on homelessness, social connectedness, and CIT. ANOVAs, t-tests, and hierarchical multiple regression analyses revealed a complex relationship between individuals and the communicative environment. This study …

The interaction between the biophysical environment and ectotherm morphology elicits behaviors designed to maintain internal body temperature (Tb) within a range that promotes physiological functions. The short-term requirements of mass (energy requirements) and heat balance are subject to tradeoffs imposed by the organisms current physiological (heat and mass budgets) and environmental (biophysical, demographic, social, and predation) constraints and available resources. In temperate forests, extreme temperatures are common in summer even with intermittent sun exposure due to dense canopy cover. Poultry is a staple protein source for most of the planet. Until recently, antibiotic growth promoters (AGPs) were used to prevent illnesses in commercial chicken production. Currently, this is not possible due to regulations and consumer concern, but without such a preventative, diseases like necrotic enteritis (NE) have reemerged, posing a threat to bird health, and ultimately, our food source. Necrotic enteritis is a severe gastrointestinal disease caused by the gram-positive pathogen, Clostridium perfringens. Zoonotic viruses are viruses that can be transmitted from animals to humans. Rodent species are likely to be reservoirs for zoonotic viruses, and particular rodent-borne viruses, such as orthohantaviruses, may greatly threaten human health. Orthohantaviruses are a group of rodent-borne viruses that are at risk for spillover to human populations. Many aspects of orthohantaviruses have been well-researched, yet the seasonality of orthohantaviruses has not yet been thoroughly examined, especially in the southern United States. Dental microwear texture analysis (DMTA) of fossil fauna has become a valuable tool for dietary inference and paleoenvironment reconstruction. Most of this work has utilized larger taxa with larger home ranges. These studies may result in broader-scale habitat inferences that could mask the details of complex mosaic habitats. Rodent DMTA offers an opportunity to work at finer spatial scales because most species have smaller home ranges. Rodents are also keystone species within their ecosystems, abundant, ubiquitous, and found in many fossil deposits. These attributes make them excellent proxies for environmental reconstructions. Creating successfully remediated landscapes may rely on both natural resources and human perception in landscape design. Urban areas present a dynamic environment wherein communities and nature compete for resources and space. This dissertation study was designed to better understand aesthetic perceptions of native plants capable of land remediation in midwestern communities. Findings from this study show the importance of aesthetic perceptions of stakeholders towards rehabilitated landscapes and the importance of organizing indicators for future design decisions in an interdisciplinary fashion. Observers of food law in the 2012 presidential election year witnessed a dramatic slowing of federal initiatives-perhaps arising from a desire by both Congress and the administration to avoid upsetting critical constituent groups during a year seemingly dominated by campaigns and endless talking points. Glades are one of the many habitats that exist in the Arkansas Ozarks and contribute to the overall biodiversity of the state of Arkansas. For this study, five dolomite glades and five limestone glades in the Ozarks of northwest Arkansas were studied from March to October in the years 2017 and 2018 to determine the similarities or differences that might be present. One hundred and fifteen vascular plant taxa were documented in the dolomite glades and one hundred and three vascular plant taxa were documented in the limestone glades. We have compiled recent important observations of distribution and reproduction of fishes and mammals. Included are new distributional records of mammals, and observations of reproduction in several mammals for which few data exist in Arkansas. We report a new state record for Pseudacris maculata from Arkansas. Furthermore, we conducted an ecological study from this population of P. maculata from Benton County. We found this population was primarily breeding during February and March. We also report limited findings on their reproduction, diet, and parasites.

Previous studies have demonstrated chemo-preventive potential of cruciferous and apiaceous vegetables against colon cancer. Colon inflammation is one condition closely related with colon cancer initiation. Therefore, we wanted to compare if total western diet (TWD) was as pro-inflammatory as died-induced obesity (DIO) and a better dietary model for human conditions, and determine if diet supplementation with cruciferous (broccoli, watercress and cabbage) or apiaceous vegetables (celery and parsnip) could reduce dietary inflammation, and which vegetable was more effective.

Previous research suggests that glade habitat degradation through woody vegetation encroachment is an important factor resulting in population declines. Riparian zones are transitional, semi-terrestrial areas regularly influenced by freshwater. These areas serve as dispersal corridors for many animal and plant species and ultimately function as important reservoirs of biodiversity in altered landscapes. While much of the riparian habitat in the United States has been affected by anthropogenic activities, management actions may mitigate potentially negative influences of these activities. Microsatellites are short tandem repeats (e.g. TAGATAGA) of base pairs in a species’ genome. High mutation rates in these regions produce variation in the number of repeats across individuals that can be utilized to study patterns of population- and landscape-level genetics and to determine parentage genetically. In this project our objective was to develop microsatellite markers for the House Finch, Haemorhous mexicanus. We analyzed the energy content of seeds of Texas doveweed (Croton texensis) obtained from the crops of mourning doves (Zenaida macroura) collected from plains-mesa sand-scrub habitat in Eddy and Lea counties, New Mexico. Seeds were removed from crops and dried for 48 hours at 60°C to remove moisture and to standardize masses. Seeds were then analyzed for gross caloric value (i.e., energy content) in an oxygen bomb calorimeter. Energy content of seeds of Texas doveweed was greater than many seeds previously reported from the diet of mourning doves.

Genetic resistance is potentially one of the most cost-effective and sustainable strategies to control FLS. This work investigates ecotoxicology of new insecticide mixtures to Apis and non-Apis bees. Previous studies have demonstrated the acute and sub-lethal toxicity of individual active ingredient insecticides to honey bees and to a lesser extent non-Apis bees. However, the contact toxicity of formulated premix insecticides containing multiple active ingredients to bees has not been thoroughly assessed. Worldwide, blackberries (Rubus L. subgenus Rubus) are an economically important crop. In 2007, Polyphagotarsonemus latus (Banks) (broad mites), were first reported damaging primocane-fruiting blackberries in Fayetteville, Arkansas. Since this time, broad mite damage to blackberries and yield loss has been reported in many states and countries. Despite the increasing reports of this blackberry pest, little is known about their population dynamics, and few treatments are available. Growers with broad mite populations need a pest management program to minimize yield loss.
