Introduction: Hypertension is a primary risk factor for heart disease and stroke, and contributes to renal disease, premature death, and disability. More recently, hypertension has also been identified as a risk factor for serious symptoms or as an underlying cause of death from Covid-19. Break up with salt (BUWS) is a 4-session, community-based nutrition education program of the LSU AgCenter, developed in response to the Covid-19 pandemic, to help Louisiana’s adults prevent or mange hypertension. Black soldier fly (BSF) larvae have been studied extensively in animal feed production, but there is limited research for non-production species, such as reptiles, despite their popularity as a calcium-rich feeder insect. The goals of this thesis were to determine the nutritive value of BSF larvae for a lizard species and as an ingredient in a diet formulated for snakes.

BSF larvae are deficient in fat soluble vitamins (A, D, and E). Using vitamin A as a test nutrient, several factors were identified that affect the success and consistency of gut loading. Based on the results, the following gut loading …

Age-related macular degeneration (AMD) is one of the leading causes of blindness among the elderly worldwide. Retinal problems, specifically in the macula, hold potential for development of AMD. Macular pigment optical density (MPOD) gives a measure of the thickness of the macula and therefore health of the macula. Some of the populations at risk for development of AMD include being white, female, and having light eye color. Childhood obesity rates have more than tripled since the 1970s, and this increased prevalence is cause for concern as childhood obesity increases the risk of adult obesity and other comorbid diseases. Evidence suggests that the origins of obesity can be identified in infanthood. Triathlon is an increasingly popular sport in which an athlete competes in swimming, biking and running in a single competitive bout. Today there are more than 140,000 members in the sanctioning body for triathlon. However, there is little descriptive data about this group of athletes. Consistently high market demand combined with low commercial catches have made Florida pompano, Trachinotus carolinus, one of the highest valued finfish from the Gulf of Mexico. Economic incentive has spurred interest in pompano culture since the 1950s, yet the body of nutritional research on pompano is still sparse. This study was conducted to measure the apparent digestibility of nutrients among a selection of common feed ingredients, and determine the optimum dietary protein level for juvenile Florida pompano at a fixed protein-to-energy ratio, in order to formulate nutritionally complete, cost-effective diets. Transverse (Harris) lines are lines of opacity that extend across the medullary cavity in long bones; they are sometimes are also found in irregular bones. Predominantly, Harris lines are seen in radiographs of the tibiae. Many scholars believe that these lines of opacity are caused by nutritional interruptions during growth, while others believe these lines to be indicators of stress recovery, rather than interruption. This study examines the incidence of transverse lines in a Pre-Columbian Costa Rican population, called Vidor, located on the northwest Bay of Culebra. Carnitine supplementation has been shown to protect animals from ammonia toxicity following an ammonium acetate infusion and to alter body composition (i.e. increase lean mass and decrease body fat) in younger animals. The aims of this study were to address the questions of whether: (1) carnitine lowers blood ammonia levels of rats fed high protein; (2) carnitine decreases the weight gain and body fat of older animals fed high fat; (3) carnitine decreases glucose-induced insulin secretion; and (4) consumption of a high fat diet increases total serum carnitine content. Three experiments were conducted with pigs and four experiments were conducted with chickens to determine the effects of supplemental dietary Cr on growth performance, carcass characteristics, tissue minerals and plasma metabolite and hormone concentrations. In pigs (Exp. 1) 200 ppb Cr from seven different sources tended to decrease performance during the grower phase and increase growth performance during the finisher phase. Dietary Cr had minimal effects on plasma metabolite and hormone concentrations and Cr did not affect carcass characteristics. Hormone replacement therapy (HRT) is chosen by a growing segment of the postmenopausal population. Mid-life body weight gain is perceived to increase further with exogenous HRT. To examine hormonal effects on caloric intake (CI), carbohydrate (CHO), FAT, protein (PRO), chocolate and body weight (BW) in a female model, Sprague-Dawley postbreeder (n = 55) rats (10 mos., 10 litters of pups) were ovariectomized (OV) and implanted with 17 $\beta$ estradiol (E) and/or progesterone (P), or placebo in three separate studies (phases) of 10 days each. The area of eating disorders have been intensively by both the psychological and medical researchers over the last two decades. Differential diagnosis of the four most prevalent eating disorders (anorexia nervosa, bulimia nervosa, compulsive overeating, and the non-binging obese) continues to be a problem for both researchers and clinicians. Diagnosis of these disorders has been complicated by the many changes in diagnostic criteria for each of the disorders. The purpose of this study was to determine the effects of the "offer versus serve" method on school lunch consumption by students in grades 1-3 when nutrition-related achievement of students was similar. This method allows students to decline two of the five food items. The sample included students in grades 1-3 in two public schools in neighboring parishes, Lafourche and Assumption. The Lafourche Parish school was using the "offer versus serve" method, while the Assumption Parish school was using the traditional method of serving lunch. The Effect Of Zinc Nutriture On Prostaglandin Synthesis And Fatty Acid Composition In Rat Testes., Prithiva Chanmugam

To determine if zinc affects prostaglandin synthesis in the rat testis, one group of rats was fed a zinc deficient (< 1 ppm) diet and two control groups were pair fed and ad lib fed a zinc sufficient (100 ppm) diet. The diets of half the zinc deficient and pair fed rats were supplemented with docosapentaenoic acid to determine if low levels of this acid, observed in the testes of zinc deficient rats, was responsible for some of the symptoms of zinc deficiency in the testis. In the tunica, 6-keto-PGF(,1(alpha)) and PGE(,2) levels (ng/gm) were lower in zinc deficient rats compared to controls, but there was no difference when PG concentration was expressed as ng/mg protein. In the testis parenchyma, zinc deficient rats had higher levels of PGs, probably due to increased levels of the precursor, arachidonic acid. PG synthesis was greater in tunica compared to parenchyma and in both tissues 6-keto-PGF(,1(alpha)) levels were much higher than those of PGE(,2). Decosapentaenoic acid supplementation had no effect on testis weight, PGs or sperm counts. It also had no effect on 22:5(omega)6 concentration in testes lipids implying that the level of supplementation was too low to have an effect, if any, on the testes. It was concluded that zinc affects PG levels in the testes, but only indirectly, through an effect on protein and fatty acid levels. It was also concluded that PGI(,2) was the major PG produced by the testis and that PG synthesis was an important function of the tunica.
