We use national Living Standards Measurement Study (LSMS) datasets from Nigeria, Tanzania, and Uganda to examine consumption by the rural and urban poor of “unhealthy foods” (including ultra-processed foods such as sweets and sugary beverages) versus “healthy foods” beyond starchy staples (such as vegetables, beans, animal products, and fruits). Consumption of processed foods and nonstaples is often associated in policy discussion in Africa with middle-class urban consumers rather than the poor. We analyzed household food consumption expenditure with Locally Weighted Scatterplot Smoothing (LOWESS) curves and augmented Engel regressions. This paper seeks to evaluate the potential efficacy of a community gardening intervention on the Navajo Nation to increase gardening and healthy eating behaviors, which are potentially important in preventing obesity and related health conditions. Rates of obesity are high among American Indians, including those living on Navajo Nation land. Eating fresh fruits and vegetables is part of healthy eating. However, availability and access to fresh fruits and vegetables are severely limited on the Navajo Nation, due to distance and cost. Most Americans do not consume recommended intakes of fruits and vegetables (F/Vs). Hands-on nutrition education applies social cognitive theory as participants practice preparing F/Vs. This study compared a four-week hands-on nutrition education program (L+HO) with lecture only (L) in older adults with assessments at baseline and weeks four and eight. Twenty-three women over the age of 50 participated in either four, 90-minute weekly L+HO classes (n = 14) or four, 40-minute weekly L nutrition education classes (n = 9). This study examined the accuracy of parent-report child fruit/ vegetable (FV) liking. Child/parent dyads (n = 24) were recruited from six Head Start preschools in North Carolina. Liking for 10 FVs was assessed using a validated pictorial tool for children; a similar scale was used for parents. Negative relationships were observed between parent/child for one fruit (grapes) and one vegetable (broccoli). Positive relationships were observed among oranges, grapes, and overall fruit rankings. Parents tended to rank children’s liking of fruits higher than their children, while children ranked liking vegetables higher. Findings suggest parents may not be accurate respondents for …

Background: Childhood obesity persists in the United States and is associated with serious health problems. Higher rates of obesity among children from disadvantaged households may be, in part, attributable to disparities in access to healthy foods such as fruits and vegetables. Community supported agriculture can improve access to and consumption of fresh produce, but the upfront payment structure, logistical barriers, and unfamiliarity with produce items may inhibit participation by low-income families. This study examined the effects of a family-based intervention for improving moderate-to-vigorous physical activity (MVPA), sedentary behavior (SB), and fruit and vegetable (F&V) intake in African American adolescents. The intervention (Project SHINE: Supporting Health Interactively through Nutrition and Exercise) integrated Social Cognitive (SCT), Self Determination (SDT), and Family Systems Theories (FST) to improve healthy physical activity and dietary behaviors. Objective

To compare the effectiveness of messages emphasizing the importance of either personal or social responsibility for dietary behavior change in increasing fruit and vegetable intake.

Design/Setting

Randomly assigned individually or socially oriented messages were delivered at baseline, 1 week, and 2 and 3 months later. Telephone surveys were conducted at baseline and 1 and 4 months later.

Participants

528 callers to a cancer information hotline who were not meeting the “5 A Day” dietary recommendation.

Interventions

A brief telephone-delivered message and 3 mailings of pamphlets and promotional items encouraging fruit and vegetable intake that emphasized either personal or social …
