The pungent natural compound allyl isothiocyanate isolated from the seeds of Cru-ciferous (Brassica) plants such as mustard is reported to exhibit numerous beneficialhealth-promoting antimicrobial, antifungal, anticarcinogenic, cardioprotective, and neu-roprotective properties. Because it is also reported to damage DNA and is toxic to aquaticorganisms, the objective of the present study was to determine whether it possesses tera-togenic properties. The frog embryo teratogenesis assay-Xenopus (FETAX) was used todetermine the following measures of developmental toxicity of the allyl isothiocyanate:(a) 96-h LC50, defined as the median concentration causing 50% embryo lethality; (b) 96-h EC50, defined as the median concentration causing 50% malformations of the …

Food-borne illnesses are of major concern in the U.S. and worldwide. Salmonella,Listeria,E. coli O157:H7 continue to be some of the major foodborne pathogens. Recurring recalls due to these pathogens demand critical antimicrobial strategies to decontaminate the food through its procession from farm to fork. Raisins are an important export commodity for Afghanistan, however, Afghan packers are challenged to export to markets seeking high quality products due to limited knowledge regarding their quality and safety. To evaluate this, Afghan raisin samples from pre-, semi-, and post-processed raisins were obtained from a raisin packer in Kabul, Afghanistan. The raisins were analyzed and compared to U.S. standards for processed raisins. The samples tested did not meet U.S. import standards for embedded sand, but the process used to clean the raisins is suitable to maintain food safety standards.

This review of the safety assessment of genetically modified (GM) crops is focused primarily on the process and progress in the United States (US). It reviews the development of the safety evaluation process from the Asilomar conference in 1975 considering issues relevant to recombinant DNA technology, to discussions between the US government, academic and industrial scientists between 1984 and 1994 when the first GM crops were being field tested and evaluated commercial release for food and feed production. How Knowledge, Experience, And Educational Level Influence The Use Of Informal And Formal Sources Of Home Canning Information, Gina M. Taylor, Allison Nichols, Ami Cook

In the research study reported here, West Virginia University Extension educators surveyed the public about their current canning knowledge and practices in 2010. The results showed that educational background and canning experience were the most important factors in understanding how clients seek canning information and the degree to which they preserve foods safely. Home canners primarily use family members as first sources of canning information and consider Extension one of the less important sources of information. Improved marketing efforts are needed to increase canners' understanding of the importance of formal canning sources, especially those offered by Extension programs.

In this dissertation, an ensemble non-uniform spectral feature selection and a kernel density decision fusion framework are proposed for the classification of hyperspectral data using a support vector machine classifier. Hyperspectral data has more number of bands and they are always highly correlated. To utilize the complete potential, a feature selection step is necessary. Due to their limited resources, rural, older adults in the United States are at risk for poor diet-related health outcomes. Nutrition education is a key component in improving health outcomes in older adults. Cooking Healthy, Eating Smart (CHES) is a nine-lesson curriculum designed to teach rural, older adults culturally appropriate nutrition and food safety information. Funding to hire health professionals to deliver such a curriculum is limited, presenting the need to explore a less expensive mode of dissemination. Hybrid Food Preservation Program Improves Food Preservation And Food Safety Knowledge, Sarah L. Francis

The growing trend in home food preservation raises concerns about whether the resulting food products will be safe to eat. The increase public demand for food preservation information led to the development of the comprehensive food preservation program, Preserve the Taste of Summer (PTTS). PTTS is a comprehensive hybrid food preservation program comprised of online lessons and corresponding in-person workshops. PTTS participants reported increases in knowledge about food preservation food safety and recommended food preservation techniques after participating.

Foodborne illness is a major public health concern in the U.S. The CDC estimates that approximately 48 million Americans become ill, 128,000 hospitalized, and 3,000 die of foodborne illnesses annually. Most of these illnesses are attributed to improper food handling. To meet the growing demand for food safety training, the Texas A&M AgriLife Extension Service developed an online course to educate food handlers in food safety best practices. Since 2008, over 7,200 food service workers have completed the online course, demonstrating that such a tool can be can used to expand Extension's outreach to this important audience.

Booming economic growth and rising consumer incomes have impacted food preferences and purchasing behavior in China. At the same time, several internationally publicized food safety incidents, particularly in the animal husbandry sector, have heightened awareness of and concern for food safety and quality in meat and dairy. The demonstration of oral Amyloid-A (AA) fibril transmissibility has raised food safety questions about the consumption of amyloidotic viscera. In a presumed prion-like mechanism, amyloid fibrils have been shown to trigger and accelerate the development of AA amyloidosis in rodent models. The finding of amyloid fibrils in edible avian and mammalian food animal tissues, combined with the inability of cooking temperatures to eliminate their amyloidogenic potential, has led to concerns that products such as pâté de foie gras may activate a reactive systemic amyloidosis in susceptible consumers. This case study characterizes the crisis communication challenges and potential response strategies of organizations facing crises of perception created by media exemplars. Exemplars are created through repeated news stories made memorable by highly vivid language, shocking visual materials, and evocative personal testimonies. ABC’s portrayal of Lean Finely Textured Beef as “pink slime” is provided as a case for analysis. The study concludes that organizations responding to crises of perception are at an extreme disadvantage when their standard operating procedures are portrayed negatively as exemplars. During the summer of 2008, a nationwide Salmonella outbreak sickened more than 1,400 people; the initial cause was thought to be tomatoes, but after further investigation, jalapeno and Serrano peppers from Mexico were the cause. The purpose of this study was to examine television news coverage of the 2008 Salmonella outbreak in jalapenos with case study methodology, through the scope of framing theory, to gain an understanding of how reporters’ ideologies, attitudes, corporate pressures, and interview sources influenced the frames that were reported on national television news networks. 5 Steps To Food Preservation Program Meets The Needs Of Idaho Families, Lorie Dye, Katie Hoffman

University of Idaho FCS Extension Educators in southeastern Idaho developed a five-lesson condensed version of safe food preservation classes, driven by participants' interest to meet the needs of everyday home preservers. A post-test survey revealed that participants took the course to be self-reliant, use their own produce, and be in control of what was in their food in a safe manner. The shorter course format consisted of five hands-on classes. The hands-on design allowed students to ask questions and share stories during the workshop, tailoring the workshop to meet the needs of participants.

The United States Department of Agriculture (USDA) initiated the National Animal Health Monitoring System (NAHMS) in 1983 to collect, analyze, and disseminate data on animal health, management, and productivity in U.S. domestic livestock populations. The purpose of this study was to determine the national seroprevalence of Toxoplasma gondii and Trichinella spiralis in grower/finisher pigs using sera collected during the 5th National Swine Study (NAHMS Swine 2012). Listeria monocytogenes is a major foodborne pathogen resulting in multiple foodborne outbreaks in United States. In this dissertation, the efficacy of six plant-derived antimicrobials (PDAs), namely trans-cinnamaldehyde, carvacrol, thymol, eugenol, β-resorcylic acid and caprylic acid, and five probiotic bacteria, namely Bifidobacterium bifidum (NRRL-B41410), Lactobacillus reuteri (B-14172), L. fermentum (B-1840), L. plantarum (B-4496), and Lactococcus lactis subspecies lactis (B-633) was investigated for controlling L. monocytogenes. Food-borne illnesses are responsible for disease globally. One of the most important strategies for combating food-borne diseases is the training of food handlers. Using social cognition theory as a framework, the purpose of this study was to assess the effectiveness of the mandatory training program for food handlers in a rural parish in Jamaica. A cross-sectional survey, using self-administered questionnaires, was used to assess and compare food safety knowledge and self-reported practices of food handlers trained in 2 government training programs, while using untrained food handlers as controls. Children’s dietary exposure to metals has received limited attention in Australia. This study undertook a market basket survey and analysed 253 food and beverages for metals. These data were used in conjunction with recent average diet data for children in Western Australia to model dietary metals exposure, with mean metals intakes calculated for boys and girls aged 8, 12, 13 and 16 years. Results show that for some metals, including cadmium, nickel and manganese, dietary intake guidelines have been exceeded in younger children. The major focus of this study was to identify the linkage between information and consumer behavior and to examine the role that a new media index played in the identifying the tone of news stories. Past studies have relied on using the number of media stories but, this study tests a new approach, i.e., in order to analyze the effect of information by incorporating the sentiment indices.
