A person who is living well can be said to be “making lifestyle choices with God’s help to support optimum physical, mental, emotional, and spiritual health and experiencing His gift of abundant life” (Tryon, 2009). All of these “dimensions” of health are interrelated, and in order for a person to truly flourish, each area must be nourished. Dietary choices can have an especially interesting impact on these dimensions. Eating healthfully is not always viewed as a joyous endeavor, but when viewed from a multi-dimensional perspective, it can become a more rewarding and intriguing pursuit.

Involvement in collegiate sports among female athletes is at an all-time high with approximately 198,000 currently participating, (National Collegiate Athletic Association, 2012). With this increase in female participation in collegiate sports, the pressures of sport participation and academics lead some women to engage in harmful eating behaviors. These harmful eating behaviors may lead to the development of disordered eating (C. Consumers of pastured hen eggs have justified paying an associated premium price because they perceive animal welfare, sustainability, and nutrition are enhanced compared to conventionally produced eggs. The objective of Study 1 (Chapter 2) was to implement practical management strategies to increase eicosapentaenoic acid (EPA) and docosahexaenoic acid ( DHA) composition of eggs (Experiment 1) and to determine if the same diet formulation would produce an enhanced EPA and DHA egg composition and effect hen health when pasture access and hen breed varied (Experiment 2). This research focuses on the health impacts of participation in the National School Lunch Program, a program providing free and reduced-cost lunches for income-eligible students and minimally subsidizing lunches for income-ineligible students. In the past decade, increasing incidence of childhood obesity, particularly among low-income individuals has drawn scrutiny over the NSLP's role in the health of student-aged children.
The first chapter introduces the reader to the NSLP, providing a history of the program since its inception at the turn of the 20th century and addressing current issues in the economic literature regarding health impacts of program participation. The second chapter …

Korean cuisine is being branded as healthy food that harmonizes nutrition and flavor (Jang & Ha, 2009). Now is the time to start new Korean restaurants in the U.S.’s ethnic cuisine market. Purpose: The purposes of this study were first to assess the vitamin D status and bone mineral density (BMD) in male and triathletes (N=15), female triathletes (N=13), and non-athletes (N=14), and to determine if circulating vitamin D was correlated with body composition, BMD, dietary calcium and vitamin D intake in triathletes. The second purpose was to determine if triathletes have a different level of serum vitamin D, body composition, BMD, dietary calcium and vitamin D intake then non-athletes. The third purpose was to determine if BMD was correlated with body composition (body mass, percent body fat, BMI) in triathletes.

International Journal of Exercise Science 6(4) : 328-340, 2013. There is a substantial body of recent evidence showing ergogenic effects of carbohydrate (CHO) mouth rinsing on endurance performance. However, there is a lack of research on the dose-effect and the aim of this study was to investigate the effect of two different concentrations (6% and 12% weight/volume, w/v) on 90 minute treadmill running performance. Seven active males took part in one familiarization trial and three experimental trials (90-minute self-paced performance trials). Legumes, most commonly identified as beans or lentils, provide a good source of both protein and carbohydrates. Many legumes contain the polysaccharide arabinogalactans, classified as dietary fiber and have unique functional properties in foods. However, these, and other plant polysaccharides have not been well characterized. A preliminary collaborative study between Florida State University and the Whistler Center at Purdue indicated that isolated legume arabinogalactans appear to have high texturizing capability through formation of viscoelastic structures. Their soluble property may also present unique fiber nutritional trait. These properties of arabinogalactans and their variability among different legumes are yet to be analyzed. …

A Comparison Of The Impact Of A Heart-Healthy Diet Versus Paleolithic Nutrition On Hyperlipidemia In Adults, Robert Pastore

Paleolithic nutrition can optimize serum lipids in adults with hyperlipidemia who have been on a heart-healthy diet based on the current recommendations by the Academy of Nutrition and Dietetics (the Academy) or the American Heart Association (AHA). Twenty subjects (10 male and 10 female) age 40 to 62 were selected based on the criteria of a diagnosis of hypercholesterolemia. Subjects were not taking any cholesterol lowering medication and had followed a calorie-controlled diet, based on either the dietary principles of the Academy or the AHA, for at least four months followed by a Paleolithic diet for four months. Olive oil is a high quality food that comes at a high-quality price. Extra virgin olive oils are obtained through specific methods created to extract the highest quality oil. The world market of olive oil is rife with accusations of adulteration and false claims regarding quality. These are serious accusations, since adulteration results in lower quality oils. True extra virgin olive oils contain higher levels of beneficial compounds including antioxidant phenolic compounds. Objectives: Quick service restaurant (QSR) television advertisements for children’s meals were compared with adult advertisements from the same companies to assess whether self-regulatory pledges for food advertisements to children had been implemented. Methods: All nationally televised advertisements for the top 25 US QSR restaurants from July 1, 2009 to June 30, 2010 were obtained and viewed to identify those advertising meals for children and these advertisements were compared with adult advertisements from the same companies. Approximately 32% of college-aged individuals are overweight or obese, yet few weight loss programs have effectively motivated this population to adopt a healthier lifestyle. A majority of this population frequently uses the social networking site Facebook. This study examined the impact of a Facebook social support group on weight loss efforts of college students. A total of 24 students were randomly assigned to either the intervention group, which consisted of a Facebook support group, or control group after attending a one-time weight loss class. Grandparents University ® (GPU) is a 2-day campus-based nutrition education program for grandparents and grandchildren based on constructs from Social Cognitive Theory and the Theory of Planned Behavior. This article describes how program theory was used to develop a working model, design activities, and select outcome measures of a 2-day nutrition program at GPU 2010 that fostered behavioral intention among intergenerational participants to eat more fruits and vegetables and become more physically active.

Our objectives were to assess melatonin receptor dependent modulation of placental cell proliferation following treatment with either melatonin, luzindole (melatonin receptor 1 and 2 antagonist), or vehicle. In addition, a second study was conducted to assess placental cell proliferation following dietary melatonin treatment in a maternal nutrient restriction model. For the first experiment, 14 primiparous ewes were fitted with Alzet mini osmotic pumps attached to a catheter and infused with vehicle, melatonin, or luzindole from d 62 to 90 of gestation. Ewes were euthanized and placentomes collected for analysis at the end of the 4 week infusion. For the second …

Against this background of atrocity visited on some populations, the contributions made by Nazi public health activists and food philosophers were considered one of the most aggressive public health movements in the world. The purpose of this research was to investigate change in elementary students willingness to try fruits and vegetables after participating in the Santa Fe Farmers' Market Children's Nutrition Program (intervention) on a class field trip. The WillTry survey was administered to 139 kindergarten, 2nd, 3rd and 4th grade students five days before and two days after they participated in the intervention. Data were also collected in Student Notebooks that participants completed during the intervention. As the elderly population continues to increase, there is an increased need for government funded meal programs. The elderly population is at high risk for malnutrition due to multiple risk factors. The purpose of this study was to determine if any correlation exists between dental health and nutrition risk factors for homebound seniors, who participate in Meals on Wheels programs. Fifty clients from MIFA Meals on Wheels participated by answering dental and nutrition questionnaires. Food-related attitudes and habits are integral to overall well-being, especially among international college students who often practice poor eating habits and experience high levels of stress from factors like school and sociocultural adjustment. Utilizing in-depth interviews, this study explored how family experiences impact food-related habits, attitudes, and beliefs of Malaysian college students in the U.S. Findings indicate that early experiences with family substantially impact current habits that persist even after coming to the U.S. and that dietary choices and habits are heavily embedded in cultural background and family history. In our fast paced world, using technology allows us to connect with people and assist them in developing healthier lifestyles within their time limits due to families, work, and other responsibilities. The goal of our project was the development of online, technology-based, nutrition, health, and fitness education challenges using social media as a means of helping consumers develop healthy lifestyle changes. Participants completed preassessments and postassessments to determine overall program impact and to self-report perceptions of knowledge gained and practice/behavior change.
