The purpose of this study was to assess nutrition and food security status of Dominican school children and their families. Anthropometric measures, diet recalls, and household food security surveys were used as tools in this assessment. This assessment may assist in prioritizing programs for the transitioning country of the Commonwealth of Dominica.
In year 1, 199 children and 197 children in year 2 from 10 primary schools in 3 regions participated in the study. Four of the schools were involved with school feeding programs while six were not involved in school feeding programs. Weight was measured on an electric scale; …

Despite its abundance and nutritional value, krill has not been widely utilized for human consumption due to the lack of proper technology for protein recovery. The study objectives were to isolate krill protein concentrate (KPC) and to determine the nutritional value, health benefits, and safety of KPC for human consumption. Proximate analysis indicated KPC on a dry basis is composed of ∼78% protein and ∼8% fat of which ∼27% are omega-3 polyunsaturated fatty acids (o-3 PUFAs). The amino acid composition of KPC indicated that all nine essential amino acids were present in amounts that met the requirements for adult humans …

Seasonal fruits are an important food resource for small songbirds during autumn migration in southern New England. Therefore, conservation and management of important stopover sites used by migrating birds requires knowledge about nutritional requirements of songbirds and nutritional composition of commonly consumed fruits. We measured nutrient composition and energy density of nine common fruits on Block Island, Rhode Island, and conducted a field experiment to estimate consumption rates of three of these fruits by birds during autumn migration. Most common fruits on Block Island contained primarily carbohydrates (41.3–91.2% dry weight), and little protein (2.6–8.6%) and fat (0.9–3.7%), although three contained …

Maternal Education And Child Nutrition: Evidence From The 2000 And 2005 Ethiopian Demographic And Health Surveys, Alemayehu Azeze Ambel

I used the 2000 and 2005 Ethiopian Demographic and Health Surveys to analyze the effect of maternal education and its pathways on chronic and acute malnutrition in Ethiopia. The pathways examined in this study are socioeconomic status, maternal health-seeking behavior, maternal knowledge of health and family planning and reproductive behavior. I find that maternal education works through all except health-seeking behavior. I also find that maternal education and its pathways are more relevant and robust in explaining chronic than acute malnutrition. The prevalence of overweight among adults and children continues to increase. The purpose of this study was to evaluate demographic factors that may be associated with an increase in a child's weight status. Subjects were children aged 2 to 6 years old in two southern West Virginia counties, McDowell and Mercer. Children were weighed and measured, and BMI was calculated. Parents or other caregivers were asked to complete a questionnaire regarding child's age, household food security, and parents' age, height and weight, education level, and hours worked per week.;A positive association between food insecurity and overweight among children was present …

Neural tube defects (NTDs) are serious birth defects that affect 3,000 pregnancies in the United States annually. All women of childbearing age are recommended to consume 400 micrograms of folic acid daily for the prevention of NTDs. Women aged 18 to 24 years have multiple risk factors for having an NTD-affected pregnancy and should be targeted by efforts to promote folic acid consumption. Survey data capturing folic acid awareness, knowledge, and supplementation behavior of women aged 18 to 24 years who are not contemplating pregnancy were examined to identify the relationship of folic acid awareness and knowledge to daily supplementation …

Although work on the prolamins of pearl millet (Pennisetum glaucum) has revealed partial amino acid sequences for several alcohol-soluble storage proteins (Marcellino et al. 2002) the genes encoding them have not yet been isolated. We constructed a cDNA library from developing P. glaucum seed tissue and screened it using maize zein gene probes to isolate several α-prolamin-like gene sequences. The proteins encoded by these genes generally fall into two size classes: 20.6kD and 27.1kD, which we call the 21kD and 27kD pennisetins. Both proteins are similar in composition and sequence to α-prolamins from maize, sorghum and Coix. Protein bodies that …

This study assesses environmental factors in the exercise and food environment, demographic factors, physical activity behavior, and fruit and vegetable consumption in 26 rural Georgia counties. The purpose of the study is to identify environmental indicators of physical activity and fruit and vegetable consumption; to see what agencies in Georgia, if any, are collecting these types of data systematically throughout the state; and, to analyze potential relationships between environmental factors and health behaviors. Strong, research-based evidence indicates the consumption of whole grains lowers the risk of chronic diseases, including type 2 diabetes mellitus, cardiovascular disease, and certain cancers, along with aiding weight regulation. Consequently, the 2005 Dietary Guidelines for Americans set forth by the Department of Health and Human Services (HHS) and the Department of Agriculture (USDA) placed an increased emphasis on whole grains in the American diet. It is recommended that at least one-half of the grains in a daily diet, or approximately 3 one-ounce servings, should be whole grain. Obesity and poor nutrition, individually and together, have created costly musculoskeletal disease epidemic in the United States. Processed food, with abundant "empty" calories, has contributed greatly to our dietary woes. Much of the food consumed today is packed with calories but refined to the point that essential nutrients are lacking. Even worse, processed food may have ingredients added that are detrimental to good health. Abundant research has documented a close relationship between obesity, poor diet and orthopaedic problems. The purpose of this study was to determine whether a wellness and nutrition education program directed at employees of a health care facility would result in changes in weight, waist and hip circumference, BMI, and nutritional practices. Nine participants completed the five week program including final weight, measurements and post-program survey to determine nutritional practices. All participants attended weekly group classes with topics related to nutrition, physical activity, and behavior changes. Changes in weight, anthropometric measurements, and BMI were calculated. The objective of this study was to determine the consumer acceptability of fruit slushes prepared with either sucralose or sugar. Subjects (n=105) were given samples of fruit slushes and asked to complete an acceptability test and survey. The sensory characteristics measured included the overall liking of the product, flavor, texture, and color using a scale of 1=dislike extremely to 5=like extremely. Subjects? daily fruit consumption patterns and knowledge of nutrition were also solicited and analyzed. On average, there were no differences (P>0.05) in sensory characteristics between the two products. Overall, participants moderately liked both products. Flavor scores of the …

The use of computer games as channels to motivate health behavior in children is increasing. The article reports that many athletes are not ingesting an adequate number of calories from their diets. Fat and lean body mass become the sources for fuel for energy and this leads to lack of tissue growth. Exercise physiologists have calculated energy intake and energy expenditure metrics with recommendations.

The article presents information on reading food labels to assist athletes in making better food choices. It discusses the six components required to appear on labels by the U.S. Food and Drug Administration (FDA), including product identity, net contents or number of servings per container, and the ingredient list. The key recommendations of the 2005 Dietary Guidelines for Americans are presented. Daily values as an expression of a food's nutrient content are discussed.

Research has shown that changes in nutrition can have an effect on reproductive performance. Our objective was to determine the effect of post-AI nutrition on BCS, blood urea nitrogen (BUN), progesterone, and pregnancy rates. Forage-developed Angus-cross bred heifers (n = 336) were synchronized with the Select Synch+ Controlled Internal Drug Releasing device (CIDR) protocol (d -7 100 μg GnRH and CIDR; d 0 25 mg PG and removal of CIDR). Estrus was detected for 72 h and heifers bred by AI 12 h after being detected in estrus; heifers not in detected in estrus were bred by AI and given …
