Parents' Perceptions Of The Gluten-Free Casein-Free Diet For Their Children With Autism, Annette Puglisi

This study examined the factors that affected parent's decision for putting their autistic children on a gluten free casein free diet (gfcf diet). Parents completed a fifteen question survey relating to multiple factors affecting their lives while having their children on a gfcf diet. In addition, parents were asked to fill out a three day diet history for their child for a nutrient analysis.;Fifty three surveys (21%) and ten diet histories were returned. The majority of parents first heard of the gfcf diet either on the Internet (28%) or from Parent Magazine (32%). Desperation (25%) was the main reason parents …

This dissertation sought to critically analyze the university environment by examining how the representation practices of corporations articulate with the growing obesity epidemic. For this study, existing data from one southeastern university was collected to describe the articulation between the university and obesity. The analysis examined the collected information and used the cultural studies concept of representation to expose the articulation between obesity and the university setting, including the three major theoretical works of Martin Nestle, Henry Giroux, Michel Foucault, and Paulo Freire. Patients With Metabolic Syndrome: A Study Using Automated Dietary Assessment In Primary Care, Y. C. Probst

An automated dietary assessment website has been developed for patients with metabolic syndrome. Computers have been set up in local GP practices to which the GP may refer their patients. These patients enter their dietary information into the website and receive an individualised dietary prescription put together by a dietitian. This study outlines the profile of patients using the website and their rates of completion of the assessment. Recruited patients were primarily female(66%). Ranging between 22 and 75 years of age patients reported to be overweight(77%), have high cholesterol (53%), elevated blood pressure (54%) and/or type 2 diabetes mellitus (35%). …

Declines in greater sage grouse (Centrocercus urophasianus) productivity and population numbers throughout their range demand a better understanding of how nutrition influences sage grouse populations. During March and April 1999–2001, blood samples were collected from 158 female (73 adult, 85 yearling), free-ranging, prelaying, greater sage grouse from an area in northwestern Nevada, USA, and southeastern Oregon, USA. These blood samples were evaluated to establish normal blood values for sage grouse and ascertain if certain blood parameters, as indices of nutrition, are useful for predicting if sage grouse hens would raise at least one chick to 1 August. An increasing number of studies are focusing on the potential association between dietary folate intake and risk of various cancers (1), particularly of the colorectum and breast (2, 3). A low folate status can induce misincorporation of uracil into DNA, leading to chromosome breaks in humans and hence increasing cancer risk (4). Alcohol may increase folate requirements in the body and cause relative folate deficiencies (2). Objectives: To explore the beliefs and attitudes of Australian consumers to claims about fat made on the labels of packaged food.
Design: Content analysis of transcripts from focus group discussions.
Subjects: 26 females and 10 males aged 20-80y, recruited by advertisement into six focus groups, stratified by age, sex and health status.
Results: Awareness of claims about fat was high in this sample of Australians and participants admitted that they influenced their purchase decisions. The most preferred form of claim was “X% fat free”. Claims were considered most useful on foods that were high in fat. There was considerable scepticism …

Efficacy Of A Nutrition Education Program Designed For Grades K-3 Piloted In Johnson County Schools., Allison Nicole Lowry

The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.

Humic substances are reported to improve plant growth and nutrient uptake, with iron the most studied nutrient. The most common forms of iron in soils are iron oxides, which are stable under aerobic conditions and unavailable for plant uptake. Iron deficient plants become chlorotic, which reduces growth and yield. To determine if humic substances can reduce iron chlorosis, five commercially available organic acids were tested on maize grown in sand columns at high pH. The dry granular humic acid from Aldrich Chemical Company applied at 84.4 g/liter of sand by volume (5% by mass) and 1 g/liter added with irrigation …

For the past decade, Florida’s Latino population has significantly increased and is now the third largest in the United States. The same trend has also occurred in Hillsborough County. Social and economic disparities are significant as Latinos earn less than non-Hispanic whites and many live in poverty. A major concern of this population is the lack of access to inexpensive fresh fruits and vegetables. Findings from prior research show that the diet of immigrants often change quickly upon their arrival to the United States, with an increased emphasis on fast food and soft drinks and a reduction in the consumption …

National trends show consistent increases, as well as racial and ethnic dis- parities, in the prevalence of overweight children and adolescents. Such disparity is evident regarding behaviors such as a poor diet and a lack of physical activity and in the prevalence and outcomes of associated health problems. It has been suggested that grounding interventions in cultural traditions and norms are critical for preventing obesity among ethnic and racial minority youth; however, with some notable exceptions, few community interventions have used this approach. Objective: To develop a nutrition screening tool for use in older South Africans. Design: A cross-sectional validation study in 283 free-living and institutionalised black South Africans (60+ years). Methods: Trained fieldworkers administered a 24-hour recall and the Mini Nutritional Assessment (MNA) screening tool, and performed anthropometric measurements and physical function tests. Cognitive function was assessed using a validated version of the Six-Item Cognitive Impairment Test. Biochemical indicators assessed included serum albumin, haemoglobin, ferritin, vitamin B12, red-blood-cell folate, cholesterol and vitamin C. As part of a larger study developing dietary software, this study aims to evaluate a sample of potential users for their experience and comfort with computers and assess the preferred program design and navigation features for the development of the automated diet history interview. A telephone-based questionnaire and focus groups were employed to evaluate the perceptions, beliefs and attitudes of 37 older adults with type 2 diabetes mellitus. Objectives To determine the level of knowledge regarding iodine nutrition and its relationship with socio-economic status in the South African population. Design A cross-sectional population survey collecting questionnaire information on knowledge of iodine nutrition and sociodemographic variables in a multistage, stratified, cluster study sample, representative of the adult South African population. Setting Home visits and personal interviews in the language of the respondent. Subjects Data were collected from one adult in each of the selected 2164 households, and the participation rate was 98%. The following work was conducted at the Agricultural Experimental Center under the title of : Apparent digestibility in llamas feed with stipa ichu (Peruvian feather grass) treated with urea and molasses, for which 3 assays were performed in reference to the study : 1) percentage of assimilation of the treated and non- treated grass, 2) apparent digestibility of fiber and protein after and before feeding, and 3) determine the adequate levels of urea and molasses for the chemical treatment of the grass (Stipa ichu).
