From 1990 to 2000, South Carolina's Hispanic population increased 211%. Now, states such as South Carolina have the fastest growing Hispanic population in the U.S. Hispanics have a high incidence of obesity and related chronic diseases such as diabetes, stroke, hypertension and heart disease, these diseases could be avoided through diet. Meanwhile, nutrition education interventions help to reduce weight and to change behaviors, leading to better health. This study used qualitative and quantitative methods to examine Hispanics health and nutritional needs to develop a cultural compatible nutrition program for this audience. The number of refugees being uprooted from their homes to seek refuge and resettlement in countries like the United States continues to grow, with large numbers being children. While each refugee group has its own set of challenges when adjusting to a new country, a better understanding of their needs may help facilitate their transition more quickly with lesser challenges. The traditional model of Western mental health treatment for survivors of torture has focused mainly on posttraumatic stress disorder and related conditions. This model is symptoms-focused in which the goal is to reduce pathology. In this model, the mental health professional is the expert and the survivors learn from the professionals. Using grounded theory methodology, the current study seeks to expand the understanding for treatment of torture survivors by investigating, from the perspective of the torture survivors, the process of “getting better” after torture. An efficacious treatment is diminished in value if clients will not seek it out and adhere to it (Kazdin, 1978). Thus, the acceptability of a treatment to consumers is an important indicator of the quality/effectiveness of the treatment (APA, 2002). The purpose of this study was to examine acceptability of treatments for depression to adolescent females and to explore factors that might be associated with acceptability. Sixty-seven high school students (36 Hispanic and 31 non-Hispanic White) were recruited from communities in New Jersey and Florida, and interviewed by telephone. Studies on the effects of immigration are becoming more important as the number of immigrants into the United States continues to grow. This study was implemented in order to discover the infant feeding practices and beliefs of Haitians living in Central Florida. A food frequency card sort and interview were conducted with thirty-four Haitian mothers. Mothers were asked to identify which foods they fed their children. Foods pictured on the cards included a majority of Haitian staple foods, some of which are primary to the American diet as well. The purpose of this focused ethnography was to discover the culturally based health care beliefs and practices of the Puerto Rican population in urban Southeastern Pennsylvania as related by Puerto Rican women. The study also sought to discern the influence of acculturation on the health beliefs and practices of this population. The study used a qualitative methodology to elicit the emic viewpoint of the informants through semi-structured interviews, participant observation, fieldnotes and memos. The ability of immigrants to integrate into a new society is dependent on a number of factors including the strength of an immigrant's ethnic identity, willingness of the immigrant to accept the beliefs, values, and cultural practices of the host society, and attitudes of members of the host society toward immigrants. This paper reviews research on attitudes toward immigration, in relation to theoretical approaches including Berry's (2003) model of acculturation expectations.
