In this research, we focused on understanding the critical elements impacting consumer experience and the nutritional value of dairy products, specifically their texture, mouthfeel, and protein breakdown in the gastrointestinal tract. Our study aimed to accomplish two main goals. First, we performed analysis of the tribological attributes of various commercially dairy products. Previous research has found that lower limb muscle asymmetries increase with age and are linked to fall and injury risks. However, past studies lacked a wide variety of muscle function modes and measures as well as comparison to a comparable young aged group. Blood flow restriction (BFR) exercise has become an increasingly common modality due to evidence that it may yield positive muscle-related effects from low-intensity exercise. However, eccentric-only exercise in a multi-joint format has not yet been investigated in regard to the BFR influence on muscle recovery characteristics. Refugees face many challenges related to obtaining and preparing adequate and culturally acceptable and desirable foods in their resettlement communities. These challenges often lead to risk of food insecurity and chronic diseases. A review of literature identified the existing delivery strategies and highlighted the need for nutrition education tailored to the refugees’ conditions. This study identified some of the barriers that refugees face, including the English language, transportation, finding items in grocery stores, availability of ingredients and equipment needed for cooking, affordability of food and budgeting. Depression is one of the most debilitating and widespread mental health conditions in the world today. Drugs that are traditionally prescribed to combat depression are flawed in several ways, and because of this, new treatments are needed. One drug that seems capable of overcoming the limitations of traditional antidepressants is ketamine. In clinical research, a single dose of ketamine can significantly reduce symptoms of depression quickly, its effects may last for weeks to months, and its side effects appear to be limited and relatively harmless. The purpose of this research was to explore the impact on thinking when an individual is not able to "see with a mind's eye." This is known as aphantasia and is the reduction or absence of visual imagery, which can have large impacts on problem solving and remembering one's own past. Dehydropyrrolizidine alkaloids are arguably the most important plant derived toxins in terms of impact on human and animal health. Dehydropyrrolizidine alkaloids are a large group of chemically related compounds found in 3% of flowering plants worldwide. Human exposure occurs from ingestion of herbal products including teas supplements or contaminated grain. Animals are exposed through contaminated feed or grazing. There are at least 350 identified toxic PAs, from more than 6,000 plants. The toxins primarily cause liver damage, but some are proven to cause cancer. Indidvidual dehydropyrrolizidine alkaloids vary in their toxic effects. Riddelliine is the only dehydropyrrolizidine alkaloid with extensive …

The anterior cruciate ligament (ACL) rupture is a common sports injury. ACL reconstruction (ACLR) is a necessary treatment for individuals to return to competitive sports. However, a high rate of secondary injury occurs when individuals return to sport. Past research has shown that ACLR impairs physical performance, including reduction of force generate against the floor under the injured leg, changes in the gait pattern, and a loss of knee stability. Opioid overdose deaths are not equally distributed across the United States. While some areas have a less severe problem with opioid abuse, others face serious challenges, which are affected by various social factors. To address that question, in Chapter 1, I investigate how opioid mortality trends differ according to opioid types, race, and region to identify susceptible populations and areas. Purpose: When researching speech intelligibility among people with dysarthria, convenience sampling has typically been used to recruit listeners. A new online crowdsourcing method, Mechanical Turk (MTurk), results in ecologically valid results, but outlier results are often removed from the analysis and considered "noncompliant". This study aims to examine whether there is a relationship between age, gender, speech/language/hearing impairment, and whether someone is "noncompliant".

Many devices are available for measuring the height of a CMJ. An inertial measurement unit (IMU) measures linear acceleration, orientation, and angular velocity. As an alternative to using IMU estimates of flight time, CMJ height could be estimated by integrating the IMU time-series signal for vertical acceleration to derive CMJ take-off velocity in order to track whole-body center of mass (WBCoM) movement, yet this approach would require valid IMU acceleration data. Performance in anticipation of ground impact is influenced by the proprioceptive, vestibular, and visuomotor systems through multisensory integration. The contribution of vision to depth jump performance has been studied through use of stroboscopic goggles, but no study has evaluated which visuomotor skills may be a predictor for DJ performance. Awake craniotomy and language assessment procedures for brain tumor survivors can drastically affect patient outcomes and quality of life. The goal of intra-operative language mapping is to help preserve vital communicative functions. However, there is currently no standardized set of measures for intra-operative language assessment. This systematic review identified behavioral language measures used during intra-operative procedures and the resulting outcomes for adult brain tumor patients, with the aim of helping clinicians and researchers select intra-operative language assessments supported by the highest levels of evidence.

Avian species are highly susceptible to the hepatotoxic mycotoxin aflatoxin B1 (AFB1). Domesticated turkeys are exquisitely sensitive, due to a combination of highly-efficient hepatic cytochrome P450 (CYP)-mediated bioactivation, and to dysfunctional alpha-class glutathione S-transferases (GSTAs) which typically detoxify the bioactivated electrophilic metabolite exo-AFB1-8,9-epoxide (AFBO). Wild turkeys are relatively resistant to AFB1 in large part due to expression of functional GSTAs. Quail, a related Galliforme, are slightly less sensitive in vivo to AFB1, but whether this is related to the hepatic metabolic profiles of these two critical enzymes has not been rigorously evaluated. …

Context: The National Collegiate Athletic Association (NCAA) implemented a minimum weight certification program in 1997 to help protect wrestlers from dangerous weight loss practices. Despite nearly a quarter of a century of this program, there is no published research detailing the implementation of it.

Objective: Determine how the NCAA minimum weight certification is being implemented across Division I programs.

Our research examined the effects of fish oil supplementation on intestinal permeability, systemic inflammation and performance in piglets. An lipopolysaccharide (LPS) challenge was done to stimulate the synthesis and release of the cytokines, in an effort to mimic the immune response that piglets would have when facing stress or pathogen challenge. Fish oil increased feed intake but did not affect growth when compared to control. Total fatty acid digestibility increased by 6% when fish oil was included in the diet. Also, we observed a 16% increase on 16-carbon fatty acids digestibility. Fish oil did not affect the plasma …

Equine-assisted services incorporate the interaction of humans who face mental, physical, emotional, and/or social challenges and equines for therapeutic purposes. Recreational, physical, mental, social, and/or emotional goals are met through various equine-assisted services such as therapies, equine-assisted learning, and horsemanship.

The purpose of this study was to evaluate the reliability of many variables in the 5-minute Psychomotor Vigilance Test (PVT). Many studies have looked at the validity of a 5-minute PVT, but few so far have looked at reliability. For this study, 13 adult females who worked 12-hr shifts were recruited to complete a two trial day study. The first trial day, the subjects submitted health questionnaire followed by a self-reported sleepiness scale and then a 5-minute PVT.
