Reserve Officer Training Corps (ROTC) cadets' highly demanding lifestyle may negatively impact health and performance. Reports also suggest they are at risk for poor nutrition, i.e., low energy availability or not meeting Military Dietary Reference Intakes. Still, there are limited data on the barriers to proper nutrition and eating habits among ROTC cadets. Firefighters (FFs) and law enforcement officers (LEOs) have a high, lifestyle-related, risk for health conditions such as cardiovascular disease (CVD). Previous literature has examined the benefits of consuming nitrate (NO3)-rich crops (e.g., beetroot, spinach, watercress, arugula) on endothelial function due to their positive influence on nitric oxide (NO) production from the utilization of nitrate-reducing bacteria in the oral microbiome. Sport performance is influenced by sport-specific requirements for body composition. One major predictor of body composition is protein intake. Higher protein intake tends to cause leaner body composition relative to lower protein intake, especially during caloric deficit. In Bexar County, ~72% of the adult population is overweight/obese and 15.5% are diabetic. This suggests that high protein diet could be a high leverage option in the San Antonio population for optimizing body composition for sport performance. Gravel cycling is a relatively new cycling discipline, with the Union Cycliste Internationale (UCI) hosting their first UCI Gravel World Championships in 2022. Gravel races combine features of road racing, cyclocross, and mountain biking, including various terrain of varying technical difficulty (paved roads, dirt roads, fire roads, single- and double-track trails), long distances, substantial vertical elevation gain, obstacles, and limited opportunities to stop for in-race nutrition. Collegiate athletes often struggle to consume foods that provide adequate energy and nutrition to fuel their demanding physical performance and recovery needs. The increased energy expenditure during in- versus off-season training may further hinder an athlete’s ability to meet recommended intake guidelines. PURPOSE: to assess Division I student-athlete nutrition intake (calories, protein, carbohydrates, and fat) throughout training seasons of the 2019-2021 school years. An individual’s resting metabolic rate (RMR) is commonly the largest contributor to total daily energy expenditure. Diets of adult individuals with mid-spectrum (stages III and IV) Chronic Kidney Disease (CKD) remain understudied. The 2015-2020 Dietary Guidelines for Americans food patterns based on the Recommended Dietary Allowances (RDA) in concert with the National Kidney Foundation Kidney Disease Outcomes Quality Initiative (NKF KDOQI) guidelines are advised to individuals with CKD. High fat-low carbohydrate (HFLC) diets are a common approach to enhancing overall health and performance in endurance runners. Total macronutrient contents in plasma may change in response to diet and exercise. PURPOSE: To examine the responses of total plasma macronutrient contents in trained males following dietary manipulation in combination with aerobic exercise. METHODS: Eight distance runners that typically consumed high-carbohydrate (HC) diets switched to a HFLC diet for 3 weeks. Purpose: The worksite health promotion literature has shown that successful nutrition communication programs call for making small changes to diet, one at a time. The use of observational learning (role models) and a “challenge” scenario for behavior change is supported by Social Cognitive Theory. The significance of these small changes in worksites is underscored by a recent Harvard Business Review article suggesting workplace wellness programs can return up $2.71 on every $1.00 invested. Purpose: Although nutritional education was provided consistently to a group of Mexican American seniors, it was found that the seniors were not translating this into behavior change. The purpose of this study was to utilize Community Based Participatory Research to understand how Mexican American seniors define healthy eating. Method: Fourteen seniors (M=73 yrs) were administered the Nutritional Screen Initiative and interviewed about definitions of healthy eating and sociocultural influences on eating habits. Community based participatory research is a research strategy aimed at bridging the gap between research and practice. At the Good Samaritan Senior Center in San Antonio, TX there had seemed to be a disconnect between nutritional education provided to the seniors at their Senior Center and what the seniors did in practice. Background: Since 2003, Texas Southern University has coordinated conferences to educate Houston’s Third Ward community about strategies to combat childhood obesity. Presenters included faculty and students as speakers and activity coordinators. Participants indicated that these conferences are helpful in increasing awareness of health problems and the availability of community health resources. Purpose: In recent years video games have emerged as potential tools to tackle obesity. Games that use motion-sensing controllers and interfaces are often used to promote physical activity. Games are also used to impart education about diet, nutrition and health. Our goal in this project is to address childhood obesity through the design, development and implementation of a video game to teach nutrition concepts to middle-school-aged children.

Purpose: Access to healthy foods is often limited in low-income communities and prevents the adoption of a healthy diet needed to meet national dietary recommendations, reduce chronic disease, and prevent obesity. The Healthy Harvest Community Gardening Partnership is a community-based participatory research program between faith-based organizations, academic institutions, local philanthropy, and other non-profit institutions, created in 2009 for improving access to healthy foods and quality of life through a community garden network.
