This literature review seeks to provide an overview of the current research on childhood obesity. The study examines the prevalence and causes of childhood obesity, including genetic, environmental, and behavioral factors. In this thesis I argue that improving diet in communities depends on building nutritional knowledge. In examining the role of community level organizations, I look specifically at how knowledge is conveyed through agriculture and gastronomy. This project analyzes how civil society organizations work to reintegrate individuals into food systems, compelling consumers to take agency over their diets and pursue better livelihoods. The industrialization of food systems has fundamentally changed the way humans connect with food and diet. An interdisciplinary team of Extension Educators and Specialists was developed from the Community Vitality Initiative and the Food, Nutrition, and Health team. Six dimensions were identified as contributing factors for healthful communities and were the basis for the Healthy Lifestyles Community Readiness Assessment (HLCRA): Leadership Energy; Issue Awareness; Participation; Inclusivity; Resources; and Entrepreneurial Activities.

Choline is an essential dietary nutrient essential to the development and function of the central nervous system. Prenatal choline deficiency alters hippocampal development as well as acetylcholine metabolism, leading to cognitive impairments and attentional and sensory processing deficits into adulthood. MK-801 is an NMDA receptor antagonist frequently used in rodent models of neuropsychiatric conditions, particularly schizophrenia. Acutely and sub- chronically, it causes hyperlocomotion and social withdrawal. Belmont Elementary School serves many children from low-income households (classified as a Title I school with 82.6% of students receiving free or reduced-price lunch) and, thus, was a perfect setting for the birth of an original nutrition curriculum.

The study was a month-long diet change focused on increasing omega-3 fatty acids and decreasing omega-6 fatty acids. This was done by using a Mediterranean style of eating focusing on fish, fruits, and vegetables. At the end of the diet, I lost 19 lbs, had a 2% decrease in body fat, a 2% increase in muscle, and a 7 beats per minute reduction in my heart rate.

School gardens have existed since the late nineteenth century and today are becoming increasingly popular in many parts of the world, including where I studied in Maine and Australia (AUS). Multiple organizations support school gardens in Maine, including the Maine School Garden Network, which has over 125 registered school gardens. In AUS, the Stephanie Alexander Kitchen Garden Foundation primarily supports the school garden movement and has over 800 registered school gardens.
