Effect Of Nutrition Education On Dietary Behaviors In Elementary School-Aged Children, Danny Alan Hirst Nov 2018

Effect Of Nutrition Education On Dietary Behaviors In Elementary School-Aged Children, Danny Alan Hirst

Electronic Theses and Dissertations

In this study, the effect of a multicomponent nutrition education program on dietary behaviors in elementary school-aged children was analyzed. Components involved were cooking, gardening, and general nutrition. Research questions were: 'Does nutrition education over a one-week program increase consumption of fruits and vegetables?', and 'Does nutrition education over a one-week program increase acceptance of novel foods?'. The hypothesis was: nutrition education administered in a one-week program will increase the consumption of fruits and vegetables, as well as increase willingness to try new foods. Data collection used repeated measures of two surveys: the Fruit-Vegetable-Fiber Screener and Food Neophobia Scale. Ten …

Nutrition Counseling For Transgender Individuals On Hormone Replacement Therapy, Sara Elizabeth Zellers Oct 2018

Nutrition Counseling For Transgender Individuals On Hormone Replacement Therapy, Sara Elizabeth Zellers

Electronic Theses and Dissertations

Registered Dietitian Nutritionists (RDNs) need to understand the unique needs of the transgender population and be prepared to participate in multi-disciplinary groups to help those transitioning maintain health and well-being. Currently, no studies examine a nutritional intervention specifically with this population. The purpose of this survey was to determine if RDNs are consulted for nutritional counseling either before or during hormone replacement therapy. An anonymous, online survey invitation letter was distributed to the transgender community. It was also posted to a support group on Facebook. Participants had to be over 18 years old, live in the United States, self-identify as …

Flower Visitation In Relation To Pollen And Nectar Nutrition: Implications For Pollinator Habitat And Conservation, Megan E. Leach Aug 2018

Flower Visitation In Relation To Pollen And Nectar Nutrition: Implications For Pollinator Habitat And Conservation, Megan E. Leach

Electronic Theses and Dissertations

Pollination of both wild and crop plants is at a crossroads; honey bee populations are experiencing losses at a higher rate than ever before, and some native bee species are declining in abundance to the point of being listed as endangered species. A few examples of these threats include pesticide exposure, habitat loss, and climate change. In response to bee population declines, conservation efforts have been initiated to increase habitat quality for bees by planting pollinator reservoirs or gardens. Plants provide nutrition to bees in the form of pollen and nectar. Several studies have shown links between higher nutritional quality …

Bridging The Gap: Community Gardens As A Supplement To Senior Adult Food Assistance Programs, Jheri-Lynn Mcswain Aug 2018

Bridging The Gap: Community Gardens As A Supplement To Senior Adult Food Assistance Programs, Jheri-Lynn Mcswain

Electronic Theses and Dissertations

Food insecurity and access to nutrition-rich food for senior adults receiving food assistance is an ever-growing concern in the United States. For households that lack accessible food, the availability of alternative sources of nutrition such as community gardens could be critically important to maintaining a stable level of food security. The purpose of this study was to explore the feasibility of using a community garden as a supplemental food assistance tool for congregate meals sites and food pantries. This study encompassed the following three phases: 1) surveying the trends in Shelby County, Texas senior adults receiving food assistance to determine …

The Effect Of Wild Blueberry Anthocyanins And Phenolic Acids On Innate Immunity: The Compliment System, Vasiliki Papakotsi Aug 2018

The Effect Of Wild Blueberry Anthocyanins And Phenolic Acids On Innate Immunity: The Compliment System, Vasiliki Papakotsi

Electronic Theses and Dissertations

Ingestion of berries containing polyphenols is associated with lower risk of inflammatory, metabolic, cardiovascular and degenerative diseases. Diet has been shown to modulate the activation of the complement system, a set of over 50 proteins present in the circulation and tissues that reacts in response to damage or microbial encounter and is critical for the maintenance of homeostasis. Imbalanced activation is tightly correlated with inflammation and various pathologies. Wild blueberries are a rich source of anthocyanins and phenolic acids, which can be found in plasma shortly after consumption. Given the involvement of both complement and polyphenols in the modulation of …

Nutritional Virulence Of Legionella Pneumophila., Ashley M. Best May 2018

Nutritional Virulence Of Legionella Pneumophila., Ashley M. Best

Electronic Theses and Dissertations

Legionella pneumophila is an environment organism that parasitizes a wide range of protozoa. Growth within the environmental host primes L. pneumophila for infection of human alveolar macrophages when contaminated aerosols are inhaled. Intracellular replication within either host requires the establishment a replicative niche, known as the Legionella-containing vacuole (LCV). Biogenesis of the LCV depends on the type IVb translocation system, the Dot/Icm, to translocation >320 effectors into the host cytosol. Effectors are responsible for preventing lysosome fusion to the LCV, recruitment of ER-derived vesicles to the LCV, and modulation of a plethora of host processes to promote the intracellular …

A Multi-Ingredient Dietary Supplement To Improve Growth And Development Of Small For Gestational Age Infants: Concept-Testing Using Newborn Pigs, Taisiya Yakimkova Apr 2018

A Multi-Ingredient Dietary Supplement To Improve Growth And Development Of Small For Gestational Age Infants: Concept-Testing Using Newborn Pigs, Taisiya Yakimkova

Electronic Theses and Dissertations

Approximately 10% of all neonates are born small for gestational age (SGA) and current feeding approaches increase adiposity and the risk of developing metabolic disorders, such as obesity and diabetes. This study determined if supplementing formula with a combination of leucine, medium chain triglyceride oil, and krill oil would promote gain of lean body mass using newborn SGA term pigs as a model for SGA infants. At birth, SGA pigs have relatively smaller livers and spleens (g/kg) than appropriate for gestational age (AGA) pigs and have higher serum values for alanine aminotransferase, creatine kinase, and lactate dehydrogenase. Newborn SGA pigs …

Electronic Theses and Dissertations

Effects of enzymatically hydrolyzed yeast (EHY) and supplementation frequency (FREQ) on immune parameters among beef cows and calves was evaluated. Eighty multiparous (parity = 4.2 ± 0.3) cows were fed a common brome hay-based diet (CP = 8.0 ± 0.17%). Cows were blocked by expected calving date and stratified by body condition score (BCS) before random assignment of treatment. Beginning 88 ± 5 d prior to parturition, cows were provided 1 kg daily or 3 kg every 3 d of a soybean hull-based supplement (CP = 34.0, % of DM) that contained 0 or 3 g/kg EHY. The daily supplement …

The Relationship Between Middle School Lexile Growth And School Nutrition, Lori A. Joiner Jan 2018

The Relationship Between Middle School Lexile Growth And School Nutrition, Lori A. Joiner

Electronic Theses and Dissertations

ABSTRACT

Children in poverty tend to have malnutrition and iron deficiency, and often receive their only meals for the day from a school nutrition program. Students of poverty are underperforming their academic peers. The average reading score of a student can be predicted by the accumulated levels of childhood poverty. Research has found that iron can have a positive impact on brain health. Nutrition deficiencies during the adolescent years may increase the risk of decreased cognitive function. School breakfast and lunch programs follow USDA guideline that limit portions, fats, salts, and sugars, but do not fortify vitamin and minerals necessary …
