Effect Of Finishing System And Animal Age On Carcass Traits And Nutritional Profile Of Bison Bulls, Clay Newton Jan 2022

Effect Of Finishing System And Animal Age On Carcass Traits And Nutritional Profile Of Bison Bulls, Clay Newton

Electronic Theses and Dissertations

The objectives of this thesis project were to 1) evaluate the influence of grain- and grass-finishing systems on carcass characteristics, proximate composition, nutritional profile, and fatty acid composition of bison bull meat, and 2) evaluate the influence of animal age on carcass characteristics of bison bulls. For objective 1, bison bulls were allowed to graze native range in north-central Nebraska until approximately 26 mo of age, when they were randomly assigned to either grain-finishing (n = 98; in an open lot with ad libitum access to prairie hay, alfalfa hay and corn for 95 d prior to slaughter) or grass-finishing …

Characterization Of The Rumen Bacterial Communities Of Bison Heifers Fed A Grass-Based Diet Vs A Grain-Based Free-Choice Diet, Anlly Miley Fresno Rueda Jan 2021

Characterization Of The Rumen Bacterial Communities Of Bison Heifers Fed A Grass-Based Diet Vs A Grain-Based Free-Choice Diet, Anlly Miley Fresno Rueda

Electronic Theses and Dissertations

A century ago, the North American grasslands and prairie ecosystems were dominated by bison. At least 30 million bison roamed the Great Plains when the first explorers arrived. By 1900, there were little over a thousand bison remained in the United States and Canada. Recovery efforts has been made since the 20th century to reestablish the herds and increase the bison population. Today, over 500,000 bison are distributed across North America, with more than 90% of the existing bison population under commercial production. Modern conservation strategies are made via the collaborative efforts of conservationist, producers, and researchers, resulting in increased …

Characterization Of Bison Finishing And Harvest Systems: Effects On Carcass And Meat Quality Characteristics, Jessica Janssen Jan 2020

Characterization Of Bison Finishing And Harvest Systems: Effects On Carcass And Meat Quality Characteristics, Jessica Janssen

Electronic Theses and Dissertations

The objectives of this thesis project were to 1) characterize the influence of finishing system (grain-finished vs. grass-finished) on carcass characteristics, meat quality, the nutritional composition, and consumer preference for bison meat 2) evaluate the effectiveness of beef camera grading technology on grain- and grass-finished bison carcass characteristics, and 3) characterize the influence harvest systems (on-ranch vs. commercial facilities) on animal stress response, carcass characteristics, meat quality, and consumer preference of bison heifers. For objectives 1 and 2: Grain- (n=108) and grass- (n=93) finished bison heifers were slaughtered at 28 mo of age, at approximately 20 h postmortem, carcass measurements …

Evaluation Of Bison (Bison Bison) Ecology At The Olson’S Bison Conservation Ranches, Pine River Ranch, Manitoba, Canada, Joshua L. Leonard

Electronic Theses and Dissertations

Bison (Bison bison), the largest mammalian species in North America, historically numbering in the tens of millions (Roe 1970, McHugh 1972, Dary 1989, Shaw 1995), was nearly extirpated at the turn of the 19th century (Knapp et al. 1999; Gates et al. 2010). At the time, estimates of less than 1,000 bison remaining in North America are widely accepted (Hornaday 1889; Seton 1927; Gates et al. 2010). The decline of bison includes factors such as disease (Flores 1991; Isenberg 2000), sport hunting (Danz 1997; Dary 1989; Hewitt 1919; Isenberg 2000; McHugh 1972), and unofficially funded commercial hunting by the U.S. …
