Cannabis (Cannabis sativa L.) is increasingly being cultivated for industrial and medical uses. Medical cannabis is grown for cannabinoids and terpenes, compounds that continue to show promising therapeutic potential. Cannabidiol (CBD) and delta-9- tetrahydrocannabinol (Δ9-THC) are the two most common cannabinoids, but more than 150 have been identified in cannabis. The 2018 Farm Bill federally legalized cannabis containing less than 0.3% THC and high-THC medical cannabis is legal in 38 states. There is a need to understand environmental effects on yield and quality to ensure safety and quality for medical use.

Monitoring vital rates allows managers to estimate trends in growth rates of ungulate populations. However, connecting the influence of nutrition on ungulate demography is challenging. Noninvasive sampling offers a low-cost, low-effort alternative for measuring nutritional indices, allowing for an increased understanding of the mechanistic relationships between environmental factors, nutrition, and specific population vital rates. We examined the temporal influence of intrinsic and extrinsic factors on pronghorn (Antilocapra americana) fawn recruitment. Students are required to complete supervised practice hours prior to becoming Registered Dietitians and Physician Assistants. Research suggests that environmental and social factors affect dietetic interns’ diets during their internship, although these factors have not been studied among physician assistant interns. This cross-sectional study utilized an online survey to compare dietetic interns’ (n = 81) and physician assistant interns’ (n = 79) fruit and vegetable intake, food security, barriers to healthy eating, and empowerment for making healthy dietary choices during an internship. A multidisciplinary team established the Davis County Create Healthy Gardens (CHG) program to improve access to fresh produce and help low-income residents gain skills to grow food and prepare nourishing meals. An evaluation of the program shows that participants had access to over 275 pounds of fresh produce, and most participants reported an increase in fruit and vegetable consumption. They also reported an increase in their knowledge in gardening and food preparation.

Many young children in Ecuador suffer from high rates of malnutrition and stunting that affect their long-term growth and development. Little is known about the dietary patterns of children from the Amazon region who experience some of the highest rates of stunting (height-for-age) within Ecuador. Semi-structured interviews were conducted with 50 mothers of young children living in the Ecuadorian Amazon. In addition to descriptions of overall dietary patterns, three themes emerged from the interviews relating to strengths mothers have in feeding their children healthy diets: knowledge, autonomous and independent children, and supportive and responsive parenting. Stakeholders sought to reduce the burden of preventable diabetes among adults in Utah via a “Food as Medicine” webinar series. The “Food as Medicine” webinar series sought to increase awareness of and enrollment in public diabetes programs. Evaluation results from the webinar series indicated an increase in awareness of diabetes programs and nutrition information needed to improve personal diabetes management.

This study was conducted to increase our understanding of the influence of adult female pronghorn (Antilocapra americana) physiology on fawn summer survival. Pronghorn are a valued big game animal in Idaho, but are particularly sensitive to capture; therefore, we designed a noninvasive fecal sampling study to measure pregnancy (progesterone and estrogen), diet, nutrition (fecal nitrogen and DAPA), and stress (cortisol), during metabolically-demanding female life history stages (late gestation, early lactation, and breeding season). We also compared survey results between ground and aerial methods within mountain valley landscapes.

The purpose of this study was to compare the effects of delivery method on the nutrition, food resource management (FRM), and physical activity behavior of participants enrolled in either Create Better Health’s in-person or online courses. The pre-survey and post-survey included data on nutrition, FRM, and physical activity behaviors. The researcher analyzed preexisting data from 138 SNAP-eligible adults who participated in Create Better Health’s online and in-person courses.
Results showed similar improvements in most of the nutrition and physical activity behaviors among those who took the CBH courses online or in-person. The online course showed statistically higher scores for four …

CBH is a comprehensive nutrition curriculum designed to teach adult SNAP-Ed participants how to eat well and be active on a budget. CBH combines nutrition and physical activity recommendations from United States Department of Agriculture (USDA). Each lesson has three components: a nutrition topic based on the current Dietary Guidelines for Americans, a physical activity discussion based on USDA recommendations, and a Create recipe demonstration and sample. The components are woven together in eight lessons that are designed to keep participants engaged, while actively learning the skills needed to create a healthier lifestyle.

The need for food assistance increased by 300% among Utah families as a result of the COVID-19 pandemic. Farmers and ranchers were also adversely impacted by market losses and processing shortages. The Reserve Officer Training Corps (ROTC) prepares college students for future military service. The ROTC includes a rigorous physical training program. As such, effective nutrition practices are necessary to maintain performance. The purpose of this study was to assess USU Cadets’ nutrition knowledge and practices to inform future research and intervention needs. Cadets were recruited through email and classroom announcements. Participants completed an online survey that gathered demographic, fitness, nutrition knowledge, nutrition behaviors, Intuitive Eating, perceived stress, and food security data. Nutrition plays a significant role in supporting the physical performance of USU ROTC Cadets. The purpose of this research was to learn more about ROTC cadets' dietary habits, the reasons for their dietary choices, and gain feedback on what they think could improve their dietary intake. Two, 1-hour focus groups were conducted with 8 participants total. Concentrate (grain) should be considered only as supplements to good quality hay. In general, a mature horse does not require the energy provided by concentrate-type feeds (grains/sweet feeds, pelleted feed, etc.) unless the horse is used for more than light work or in production, such as a lactating mare or a breeding stallion. Too many times horses are overfed rather than underfed. Nearly 12.3% of American households are food insecure. In Cache County, Utah, specifically, the rates of food insecurity are even higher (15%). Addressing the issue of food insecurity improves physical/mental health outcomes, childhood cognitive/physical development, family environments, and decreases healthcare costs. Evidence-based strategies to improve food security include increasing one’s access to fresh fruits and vegetables and improving self-efficacy. Community gardens are recognized as an initiative that improve participant’s levels of food security. The purpose of this study was to evaluate the acceptability and usability of an online training to prepare Expanded Food and Nutrition Education Program (EFNEP) educators to collect 24-hr dietary recalls using the Automated Self-Administered 24-Hour Dietary Assessment Tool (ASA24). Fifty-eight educators in 17 states were recruited to take the training; 29 completed the online training, assisted two individuals in completing a 24-hr recall using ASA24, and completed a survey about their experiences.
