Dairy product preservation has evolved over thousands of years and has been a major benefit to humanity by creating stable, nutrient-dense food sources. Today the lactic acid bacteria Lactobacillus reuteri is important in preserving fermented dairy products through the production of the compound reuterin. Reuterin (1,3-propanediol) demonstrates antibiotic properties that prevent the fermentation of dairy products by undesirable bacteria. The purpose of this study is to determine if L. reuteri can produce 1,3-propanediol from a variety of carbon sources. Bacterial strains were incubated in the presence of a carbon source with vitamin B-12 or without B-12 for seven days with …

This fact sheet describes the differences in the farm food safety laws, FSMA and GAP. The FDA Food Safety Modernization Act (FSMA) includes a Produce Safety Rule that became final in November, 2015 (U.S. Food and Drug Administration, 2015). The rule establishes minimum standards for the safe growing, harvesting, packing, and holding of fruits and vegetables grown for human consumption. All covered growers will need to comply with FSMA as it is a federal law. GAP is a voluntary audit program designed to verify that produce is grown, packed, handled, and stored as safely as possible.

The safety of fresh produce is an important concern in the United States, especially in the wake of recent national foodborne illness outbreaks. The agricultural industry has implemented steps to enhance food safety along the entire farm-to-fork supply chain. This includes on-farm measures to exclude wildlife and to remove its habitat in and around fields. Farmers and others from across the United States have expressed concern about the ecological consequences and uncertain food safety benefits of such practices. Food-borne illness is a vast and costly worldwide problem. Although complex, it may be divided into two major types of animal and human disease: intoxication caused by toxic substances in food and secondly, infection, caused by microorganisms. Toxic substances may be already present in foods, or they may be produced by microorganisms through contamination and proliferation in food. Prevention of the invasion of foods by microorganisms may be achieved by effective use of intrinsic factors found in plants and animals.
