The Center for Disease Control and Prevention (CDC) reports indicate that 8% and 6.3% of Kentuckians consume enough fruits and vegetables, respectively. The Plate It Up! Kentucky Proud (PIUKP) project is a recipe-development project that aims to boost produce consumption by incorporating local fruits and vegetables. The purpose of this study was to implement promotional strategies using PIUKP recipes at farmers’ markets and determine their effects on consumers’ intent of purchasing and preparing the produce. The study was conducted at nine farmers’ markets across Kentucky (n=300) in collaboration with Cooperative Extension agents/assistants.

Nutrition education has become a topic of significant concern in today’s society. An area prominent in the interest of nutrition is the battle against food security. Programs like the Supplemental Nutrition Assistance Program – Education (SNAP-Ed) is helping to improve its participants’ food security by providing nutrition education. Kentucky SNAP-Ed participants were asked to complete a survey and a 24-hour food recall to evaluate their knowledge in the following areas: Healthy Eating Index (HEI) scores, food resource management and nutrition practices. Current karst hazard maps in Kentucky reflect the general lithology of the state and ignore or significantly reduce the impact of the actual sinkholes present within these areas. These maps rely on equal weighting, by area, of the Karst Potential Index (KPI) map and the sinkhole inventory map. The KPI is based on a 1:500,000 geologic map and less than 500 data points of carbonate rocks. The sinkhole inventory is derived from topographic maps updated in the 1970s with approximately 10-foot resolution. This method gives a preferential weighting of the KPI over the sinkhole data. This dissertation combines large scale datasets to evaluate crop prediction, land values, and consumption of a crop being considered to advance a sustainable bioeconomy. In chapter 2, we propose a novel application of the multinomial logit (MNL) model to estimate the conditional transition probabilities of crop choice for the state of Kentucky. Utilizing the recovered transition probabilities the forecast distributions of total acreages for alfalfa, corn, soybeans, tobacco, and wheat produced in the state from 2010 to 2015 can be recovered. This thesis argues that the 1938 Kentucky Democratic primary was a critical moment for the New Deal and the Democratic Party. Furthermore, it demonstrates the fractures forming within the southern wing of the party. Through this primary the paper examines peoples’ perceptions of a changing democracy. One that they believed included a much more powerful president and meddling bureaucracy. It details the major points of the campaign, including Franklin Roosevelt’s visit to the state the famous poisoning accusations, and the corruption within the Works Progress Administration.

Globally, male ungulate species are heavily managed for their sporting and trophy qualities. North American elk (Cervus canadensis) are typically managed using a male-biased harvest regime, placing increased chances of mortality on males in these hunted populations. To manage for trophy quality animals that typically represent older age classes, wildlife managers have implemented many age-biased harvest regulations, including spike-only tags and antler point restrictions. Many of these age-biased harvest regulations have fallen short of their desired goal of producing older bull elk. Consequently, the consensus has evolved to center on an overall reduction in harvest pressure.

Poor diet quality is a leading risk factor for many chronic diseases affecting Americans today. Increasing consumption of fresh fruits and vegetables during childhood helps to protect against chronic diseases in adulthood and overall prolonged healthier habits. Since 1988, trends in fruit consumption remain unchanged in the United States and vegetable consumption has slightly decreased. This paper primarily examines the financial impact medication donation repositories have on individuals and the healthcare system overall. Healthcare facilities may act as repositories for donated medications to be dispensed to those otherwise unable to afford them. The specifics of each policy vary from state to state with some policies covering a wider array of acceptable donations than others. The purpose of this project is to examine the relationship between county-level socioeconomic factors and immunization compliance rates among kindergarten age children. All 120 counties in Kentucky were included in this evaluation.

County-level percent of uninsured children, number of children in poverty, children receiving free lunch (percentage), unemployment rate (percentage), and high school graduation rate were assessed. Socioeconomic data for each county were compared to county-level kindergarten vaccination rates. All vaccination data were obtained from the 2015-2016 Kentucky Annual School Immunization Survey Report. Breast cancer is one of the most common malignancies among women in the United States. Women residing in the state of Kentucky have breast cancer incidence and mortality rates greater than the national average. Recent studies suggest an association between breast cancer subtypes/hormone receptor (HR) status and the risk of recurrence and the onset of subsequent primary cancer, however, limited research has focused on Kentucky or its Appalachian region.

She began her work as a music therapist in 1995 and built a private practice, which expanded over the course of the next 20 years to include services in 16 counties. Although Medicaid work requirements are currently halted in both Arkansas and Kentucky, this analysis utilizes the data available to make an assessment and estimate of what Kentucky’s Medicaid enrollment will look like if work requirements similar to those Arkansas had are ever implemented. The relative severity of the administrative burden of such requirements provide a tool for comparison, and a difference-in-differences analysis of the change in Medicaid enrollment between Arkansas and West Virginia, a state that has not implemented and currently has no plans to implement Medicaid work requirements, provide the bases for this estimate. Prescription drug monitoring programs (PDMPs) are state policy tools to combat risky opioid prescribing. Since 2012, several states began to mandate PDMP use. As mandating use laws have settled down, evaluating potential adverse events becomes possible.

In this study, I focus on alcohol-induced mortality as a potential unintended consequence via substituting alcohol for prescription opioids, since alcohol and opioids are often concurrently misused as a part of pain self-management. Therefore, the aim of this study is to analyze the unintended consequences of prescription opioid access restrictions on alcohol-induced mortality.

After receiving FEMA hazard mitigation grants to improve weather and water management infrastructure, many communities are able to complete additional capital improvement projects that would not have been possible without the improvements facilitated by FEMA grants. FEMA projects often convert tracts of land to greenspace, or stabilize flood-damaged lands. Many communities then build public parks on such lands as a direct result. Public school districts in the Commonwealth of Kentucky are primarily funded from federal, state, and local sources. While the proportion of each of these funding sources differs from district to district, the local property tax is one source that is within the control of locally-elected officials: the members of the local Board of Education. While some Boards of Education choose to increase local tax rates to increase local revenue, others do not.
