Large quantities of manufactured nanomaterials (MNM) are released into the environment by human activity each year. The entry of MNM into the terrestrial food webs, which has the potential for far-reaching impacts, begins with the uptake by plant species from the soil. These processes can be affected by MNM physico-chemical properties such as size, chemical composition, surface charge, etc., of which our knowledge is still incomplete. This dissertation project examines how value is changed and created through organic certification and the universalizing ideas of capacity building within the olive oil industry in Jordan and how these shifts affect the social and material processes of production. I approach organic olive oil production in Jordan as one method that producers use in accessing markets and capacity building. The food system in the United States has witnessed significant challenges resulting in food security and safety concerns, environmental damage, economic distress, and a decline in our population’s health. While the last fifty years showed a drop in land and workforce dedicated to farming, industrialized farms are producing an overabundance of cheap corn that directly supplies inexpensive, unhealthy foods leading to American’s diets falling short of recommendations for good health, thus contributing to the obesity epidemic.
