Studies suggest that persons diagnosed with serious and persistent mental illness (SPMI) die prematurely compared to the rest of the general U.S. population. Previous research implies that this is due to disproportionate rates of chronic medical conditions prevalent in the SPMI population. Contributing factors to the mortality of those with SPMI include poor diet, lifestyle, and mental illness. Abstract The intent of this action research was to see if parent nutrition education changed what parents packed in their children’s lunches. This study was conducted at a Colorado Montessori school enrolling infants through kindergartners. Data sources included teacher observation before and after the nutrition classes, a pre-class parental survey on nutrition knowledge and topic needs, a teacher journal, and a post-class evaluation. Results showed that after the class, five out of seven students’ lunches changed 20 to 60%. Parents incorporated ideas learned from the class and ways to entice picky eaters. Increased intake of these foods is linked with reduced risks of developing chronic diseases, such as heart attack, cardiovascular disease, and stroke. In 2011, food insecurity affected one in six Americans. In order to achieve food security, many families turn to food pantries with options less healthy than traditional supermarkets. A survey with 32 multiple choice and short-answer questions was distributed at a food pantry in the Twin Cities area to measure food pantry usage and demographics. One hundred forty-six respondents participated in the survey. Seventy-five percent were female, with a mean age of 51, and almost half of the respondents reported having children. With the obesity epidemic on the rise an effort must be initiated to discover why dietary choices are made. Exercise cancellation in individuals who frequently exercise may cause a decrease in calories consumed. However, exercise cancellation in sedentary individuals may have opposite effect, increasing calories consumed. PURPOSE: This study was performed to determine whether the cancellation of regularly scheduled exercise affects an individual’s daily food consumption, particularly in individuals who exercise regularly compared to those who are sedentary.
