PURPOSE:Muscle soreness levels and hydration status are important indicators of recovery from high intensity endurance exercise, and can be influenced by post-exercise nutrient intake. Chocolate milk has been reported to be an effective recovery beverage in adults, as it contains carbohydrate, protein, and water/electrolytes at levels that are appropriate for refueling, muscle repair, and rehydration. However, few studies have tested the efficacy of chocolate milk for post-exercise recovery in adolescents. METHODS:Eight competitive teenage cyclists (5 male, 3 female; 16.1 ±1.1 y; 174.0 ±10.7 cm; 138.4 ±5.6 lbs; 61.8 ±8.2 ml/kg/min) completed three experimental trials, in randomly counterbalanced order. …

Background: The Neighborhood Produce Market (NPM) is a food distribution model similar to a mobile food pantry. NPM stakeholders observed a lack of community engagement and familiarity with produce offered.

Project Description: The objective was to develop a nutrition education curriculum for NPM volunteers to better engage families and community members by providing food samples, recipes, and nutrition education. A stakeholder steering committee guided the needs assessment, curriculum development, volunteer training, and pilot test. Dietary ingredients can influence the mucosal surface morphology and mucosal immunity of the gastrointestinal tract. Additional health concerns and behavioral changes have been attributed to the consumption of foods containing preservatives and additives. Sodium benzoate (SB) is a commonly used bacteriostatic in food and beverages. This study investigates the effects of SB on the gut bacteria and mucosal health in the gastrointestinal tract of laboratory mice. The extent of lymphocytic infiltration in intestinal villi and granular density of Paneth cells in the ileum were used as evaluators of mucosal immunity. The following paper describes psycho-educational techniques that focus on nutrition as a complementary self-care intervention integrated to a group for students struggling with depressed mood. Included is a review of nutrition literature as a complement to counseling in general and six nutrition “bites” with handouts that accompanied six out of eight group sessions. The impressions of group leaders and responses of group members conclude the research and provide evaluations that support such inclusion as well as recommendations for enhancement of this material.

Purpose: Brain Derived Neurotrophic Factor (BDNF) is part of the superfamily of neurotrophins including: nerve growth factor (NGF), neurotrophin-3 (NT-3) and neurotrophin-4 (NT-4). Recent evidence suggests that aerobic activity can increase BDNF levels both during and following exercise. Likewise, dietary habits have been shown to alter BDNF levels. However, nothing is known about the effect of BDNF levels during aerobic activity under specific dietary interventions. Abstract

Objective: To determine if collegiate athletic trainers meet the current national recommendations for a healthy weight, diet and physical activity.

Design: The research was a cross-sectional design consisting of a self-constructed survey formulated using the 2010 Dietary Guidelines and 2009 Academy of Sports Medicine Physical Activity Recommendations.

Subjects: One- thousand randomly selected athletic trainers were contacted to participate. One-hundred and five participants (10.5% return rate) completed the survey. All were District 3 members of the National Athletic Trainers Association.

Purpose: The purpose of this study was to explore public awareness and knowledge of gluten and the Gluten-Free Diet (GFD) with the intent to discover a difference between knowledge of gluten and related topics, and willingness to engage in the GFD fad. Methods: A Qualtrics survey was distributed to students at James Madison University. Answers to an educational quiz were used to calculate an overall score, which were divided into tertiles identified as Low Knowledge (LK), Moderate Knowledge (MK), and High Knowledge (HK). This paper discusses ideas for harmony on 100 acres in mid-eastern New York. Problems leading to this research include the depletion of resources from irresponsible energy use and profit-driven industrial agriculture; dependency on fossil fuels and centralized energy; and lack of connection between people within communities, with their environment, and with sources of food and water. It is feared that sustainable, resilience building practices that nourished generations throughout history are being neglected.
