This study investigates the nutrition education programs implemented by organizations that operate Fresh Markets in Grand Rapids, Michigan, with the goal of connecting empowered nutrition education to a food justice context. A review of scholarly literature reveals that there has been limited published work within the last three decades that integrates empowered nutrition to a food justice context. Analysis of interviews conducted with the four organizations indicates that nutrition education is used as a tool of empowerment in a food justice framework. Alternative food systems have become a popular response to conventional food systems both agri-business and emergency food assistance charities. Common alternative food systems, like farmers markets, food co-ops, and community supported agriculture, are market-based strategies which emphasize environmental concerns. They are often dominated by white people who deem their emphasis on “local, healthy food” to be universal. While food justice issues are incorporated into some alternative food organizations, not all organizations seek input or engagement with the local BIPOC, Indigenous, and low-income people they serve. The sense of belonging to a community, or social cohesion, is established in food spaces enabled by three separate and unique mechanisms: proximity, frequency, and interactions. This study looks specifically at the Fulton Street Farmers Market in Grand Rapids and the effects the COVID-19 pandemic had on the social benefits derived from the mechanisms of social cohesion, in an attempt to identify and discover new ways to leverage social cohesion in food spaces.
