The objective of this thesis was to determine the anticoccidial profile of Eimeria spp. derived from wild turkeys. These drug-sensitive Eimeria spp. have potential to be used as vaccine candidates to control coccidiosis in commercial turkeys. Chapter two consists of a brief literature review focused on coccidiosis in turkeys. Chapter three addresses the methodologies utilized to isolate, recover, and speciate Eimeria recovered from wild turkey feces in the eastern two-thirds of the United States. From this, we successfully obtained single oocyst-derived stocks for E. meleagrimitis, E. dispersa, E. meleagridis, E. gallopavonis, and E. adenoeides. Histomonas meleagridis, is a parasitic protozoan, commonly found in the gallinaceous species of birds and is the causative agent of Blackhead disease. The cecal worm, known as Heteraskis gallinarum, acts as a vector in the spread of H. meleagridis in gallinaceous birds. H. meleagridis develops inside the cecal worm and in its eggs which allows H. meleagridis a method to survive in the environment. Blackhead disease causes high mortality rates in both chickens and turkeys; however, turkeys are noted to have a higher mortality rate compared to chickens. The term “microbiome” refers to all the micro-organisms within a particular environment. In poultry, the microbiome is influenced by the barn, diet, and age of the birds and is believed to modulate immunity and inflammation. Protein is one of the most expensive nutrients in poultry diets. In an effort to minimize feed costs, protein digestion and utilization by the animal must be carried out as effi­ciently as possible. The objective of this experiment was to evaluate the effects of dietary amino acid density and exogenous protease inclusion on growth performance and amino acid digestibility in turkey poults. Histomonas meleagridis is the etiological agent of histomoniasis, also commonly known as blackhead disease. This protozoal disease of poultry is detrimental to turkeys with flock mortalities often reaching 80-100%, although other gallinaceous birds are susceptible. Since the voluntary removal of nitarsone in 2015, the poultry industry is suffering with no approved prophylactics, therapeutics, or vaccines for this disease. The objectives of this dissertation were to evaluate multiple methods for prevention or control of histomoniasis, including dietary chemoprophylaxis and vaccination. Histomoniasis, commonly known as blackhead disease, has increased in prevalence due to the regulatory ban of prophylactics and therapeutics within the past 30 years. The objective of this thesis was to evaluate the efficacy of selected dietary chemoprophylaxis candidates as well as an in vitro live-attenuated vaccine candidate Histomonas meleagridis for prevention of histomoniasis. Chapter one addresses deoxycholic acid and a biliogenic diet intended to endogenously increase production of this secondary bile acid. Deoxycholic acid was effective in vitro but failed to prevent histomoniasis when evaluated during the in vivo experimental disease trial with turkeys. The biliogenic diet did not …

This study compared physicochemical and sensory qualities of deli-style turkey breast produced pre-converted celery juice powder (CP; for alternative curing) or sodium nitrite (SN; for conventional curing). Formulas were designed to include 0, 50, 100, 150, and 200 ppm ingoing sodium nitrite or the equivalent from CP or SN, and 3 replicates of products were manufactured. Turkey and curing brines were tumbled, stuffed, and cooked to an internal temperature of 73.9oC. Coccidiosis is a common enteric disease of turkeys that is caused by protozoan parasites belonging to the genus Eimeria. There are about seven species of Eimeria that affect turkeys and of these E. adenoeides is the most pathogenic and commonly recognized. Infection with Eimeria is known to induce a long lasting protective immunity in chickens, but nothing is known regarding the acquisition of immunity to Eimeria in turkeys. The goal of this research was to determine the extent of resistance that turkey roundworms, Ascaridia dissimilis, have developed to anti-parasitic chemicals used in commercial poultry operations. Roundworm infections in turkeys have resulted in monetary losses for the poultry industry for years, generally due to poor feed conversion. The infection itself is subclinical and many turkeys have a light to moderate worm burden. Since parasitisms are light, this leads to the infections being noticed only during processing. This research evaluates the use of a buffered vinegar and lemon juice concentrate (LV) solution on the quality of restructured beef and turkey rolls. Two studies were conducted to evaluate processing and ingredient concentration. Beef and turkey rolls were formulated with minimal ingredients. 1.5% sea salt, 0.5% turbinado sugar, with LV or no LV. Study one evaluated length of mixing time (2.5, 5, 10, 15, 20 minutes) on quality and sensory attributes with 2.5% LV or 0% LV (C).
