Development Of Methods For Assessing The Effect Of Moisture And Aging On Sliceability Of Cheese, Jess Perrie

Sliceability is a cheese’s ability to cut cleanly into thin slices, resist breakage or fracture at slices edges, and undergo a high level of bending before breaking. Intuitively, sliceability depends on the chemistry, microstructural, and rheological properties of the casein network. Currently there is no reported scientific research investigating evaluation methods of cheese slice quality, as well as properties that influence a cheese’s ability to slice.

In this study, a method for slice quality evaluation was developed on purchased cheese and performed on commercial cheeses and experimental cheeses manufactured at three different moisture contents (40.6%, 37.0%, and 33.9%). In addition, …

Cardiovascular disease (CVD) is a leading cause of mortality and morbidity in the United States. The prevalence of CVD will increase in conjunction with the rise in obesity and type 2 diabetes and decrease in physical activity, due to the adverse effects of adiposity and atherosclerosis associated with these syndromes. Excellent inpatient, outpatient, and community-based program s are available to educate and direct healthy behavioral changes, yet the number of programs available is not sufficient for the volume of patients, nor widely distributed in all areas (particularly rural areas). Youth consuming inadequate amounts of calcium are at risk of developing osteoporosis later in life. To better assess dietary calcium intakes and the efficacy of dietary intervention strategies to improve bone health among youth, it is important to develop calcium intake assessment tools that are reliable, accurate, and interactively engaging for a new generation of youth who have a higher computer literacy and are more technologically knowledgeable than preceding generations. The purpose of this study was to develop a food quality index that can provide practical information to both consumers and professional people. The Index of Food Quality (IFQ) is a simple computerized tool based on a concept of nutrient density. The IFQ was designed to organize and clarify the present body of food composition data into a form that is directly applicable to dietary problems.
