Obesity is an epidemic in the United States. Over 61% of U.S. adults and 58% of Nevada adults have Body Mass Index’s (BMI) that classify them as either overweight or obese (Behavioral Risk Factor Surveillance System [BRFSS], 2005). According to a recent article published in the Journal of the American Medical Association, obesity was the second leading cause of preventable death in the United States behind tobacco use (Mokdad, Marks, Stroup & Gerberding, 2004).

A working definition of a concept known as ‘food literacy’ encompasses using basic food preparation knowledge that has been learned, understood, and practiced to make better food decisions. To advance these skills for client service, a post-secondary nutrition program would need to include objectives that allow application of knowledge. For this reason, the purpose of this study was to determine the difference in knowledge and application among students in 100, 200 and 400 level college nutrition course(s). It is recommended that children and adolescents participate in > 60 minutes of moderate-to-vigorous physical activity (MVPA) per day. Despite the current recommendations and positive health benefits, many children and adolescents still do not engage in regular physical activity (PA).

One challenge for assisting children in becoming more active is sedentary screen-based activities (SBAs), such as watching television (TV), using computers, and playing sedentary video games (VGs), as SBAs may compete with time for being physically active in children. A dietary assessment website for use in the primary healthcare setting has been developed. The website allows patients, referred from their GP, to self-report their dietary intake. Data from the website feeds to a dietitian who develops individualised dietary advice for the patient. The aim of this paper is to describe the usability testing of the dietary assessment website with its potential users. Testing was broken into two phases. Forty-two free-living adults with metabolic syndrome volunteered, 17 completed phase one and 10 completed phase two, with a 64% rate of completion. As part of a larger study developing dietary software, this study aims to evaluate a sample of potential users for their experience and comfort with computers and assess the preferred program design and navigation features for the development of the automated diet history interview. A telephone-based questionnaire and focus groups were employed to evaluate the perceptions, beliefs and attitudes of 37 older adults with type 2 diabetes mellitus. Participants were also shown a range of existing dietary assessment programs and asked to state their perceptions of each. Obesity has become an epidemic in the United States, affecting individuals of all ages. Adolescents are particularly susceptible to obesity due to their decrease in physical activity, as well as to the greater availability of foods void of nutritional value. Adolescents’ impressionable natures and changing bodies also contribute to their increased weights. To combat the problem of obesity, many schools have implemented obesity prevention programs. Most of these programs are based on physical education and nutrition education. Background: Rural residents are increasingly identified as being at greater risk for health disparities. These inequities may be related to health behaviors such as adequate fruits and vegetable consumption. There is little national-level population-based research about the prevalence of fruit and vegetable consumption by US rural population adults. The objective of this study was to examine the prevalence differences between US rural and non-rural adults in consuming at least five daily servings of combined fruits and vegetables.

Methods: Cross-sectional analysis of weighted 2009 Behavioral Risk Factor Surveillance Survey (BRFSS) data using bivariate and multivariate techniques. 52,259,789 US adults were identified …

Vegetarian diets, when well-planned out, have been shown to meet the needs of female athletes. Although the lifestyle provides many benefits, it does not come without risk. Women athletes, in particular, are of the greatest concern. Energy restriction is common among female collegiate athletes. Because athletes are already converting to and practicing a vegetarian lifestyle, it is necessary that athletes and related sport professionals become aware of the risks and benefits of a vegetarian lifestyle. Sweetwater Organic Community Farm is an organic farm and environmental education center located in Tampa, Florida. The farm employs the community supported agriculture (CSA) model, in which members pay a single fee before the growing season begins and receive a weekly or biweekly share of the ongoing harvest in return. Using multiple ethnographic methods, this research aimed to understand the daily operations at Sweetwater as well as the perceptions of staff and CSA members. Findings indicated that there were myriad perceived advantages of organic agriculture but also imposing challenges that needed to be overcome. Moreover, staff members acknowledged the challenges …

Corporate wellness initiatives are gaining momentum as a critical indicator of business performance. Metabolic Syndrome is commonly used within corporations to assess the health of their employees and estimate potential healthcare costs. Using five risk factors (blood pressure, high density lipoprotein (HDL-C), triglycerides (TG), fasting blood glucose, and waist circumference) individuals with three or more risk factors are classified as having Metabolic Syndrome. Voluntary pre and post health screenings were conducted at a rural manufacturing plant.
