The range of different contexts in which children learn and develop dietary and physical activity habits varies greatly, yet there is limited research on the role of the family structure and parenting style in the development of childhood obesity. CHAMPS (Child Health and Methods of Parenting Study), was designed to explore the relationships between parenting style, family structure, and child health status through a new lens and novel application of the Unified Theory of Behavior model. Over one-third of adults in the United States are obese. Recent shifts in research have focused on environmental issues to understand and address this epidemic, primarily within the food environment. The goal of this study included examining customer perceptions and behaviors towards access and affordability of healthy foods in rural food retail venues across Nebraska. Differences were assessed between stores, with the Choose Healthy Here (CHH) pilot program implemented at treatment stores only. Process surveys were completed by participants ≥19 years of age. Statistical analysis was performed with a p≤0.05 level of significance used.

The objective was to assess whether the food environment at the University of Nebraska-Lincoln (UNL) campuses supports healthy eating behaviors using components of the Healthy Campus Environmental Audit (vending, dining, and convenience store audits). Secondary aims were to compare the UNL food environment to other college campuses and explore whether there are existing health promotion and obesity prevention initiatives, programs, pledges and/or policies at UNL.

The purpose of this study was to examine the test-retest reliability for peak torque (PT), rates of torque development (RTD), and electromechanical delay (EMD) calculated during voluntary and evoked muscle actions in men ages 65 and older. Fifteen older men (mean ± standard deviation (SD) age = 72.3 ± 7.3 years) completed 3 evoked and 3 voluntary isometric muscle actions of the leg extensors during two visits separated by 48 to 72 h. BACKGROUND: There is a limited amount of knowledge of the impact current and goal weights of college students have on their attitudes surrounding weight and physical activity.

OBJECTIVE: To examine weight/body image and physical activity attitudes of students and whether those attitudes correlate current and goal weights of students.

SETTING: The questionnaires utilized were completed between the years 2006-2011 at the University of Nebraska—Lincoln.

School Food Environment The Frontline For Childhood Obesity Prevention: A Mixed-Method Study Of Nutritional Competencies And Skills Of School Nutriiton Professionals In Nebraska, Zainab Rida

The purpose of this statewide study was to address the nutrition knowledge, attitudes, and perceptions of school foodservice personnel in Nebraska regarding offering/serving healthy school meals. Moreover, this study identified some potential barriers and avenues of action for offering/serving healthy school meals. Data obtained from this study indicates that there is a strong correlation (r= .103, p r .237, p< .01) between the foodservice staff’s self-efficacy and their practices of offering/serving healthy school meals. Fortunately, the relationship between foodservice staff practices of offering/serving healthy school meals and their self-efficacy was positive and significantly predicted practices scores, β =.237, P< 0.01. The finding of the present study also identifies many barriers including lack of time and support that face the foodservice personnel in offering/serving healthy school meals. The findings suggested that there is an urgent need of a full school approach to promote and encourage healthy eating habits among students. Future research is needed to evaluate school wellness policies regarding healthy eating practices in schools. Moreover, establish partnerships with communities and universities for intervention that target students and their parents.

Children are at a heightened risk for foodborne illness. Handling leftover food safely was identified as a concern from focus groups with the main food preparer in families with young children in two Midwestern states. To design, implement, and evaluate a theory-based food safety education intervention to raise awareness of the USDA guideline for handling leftover food. The food safety social marketing campaign “4 Day Throw Away” launched in towns throughout Nebraska and Iowa. More than 25% of children in the U.S. are overweight. Farm to School is a program that encourages schools to procure local produce and nutrition education in an effort to improve childhood nutrition. A case study involving four schools has examined the attitudes of food service managers, food service staff members, and educators who are about to incorporate this program into their schools. During the preschool years, obesigenic eating habits are formed which are strongly associated with risk of developing chronic diseases later in life particularly cardiovascular disease. Docosahexaenoic acid (DHA) omega-3 fatty acid is a polyunsaturated fat with known benefits for heart health, brain cell structure, and retinal development. Current intakes of DHA are below recommended levels. United States (US) Midwestern children may be particularly at risk for suboptimal intakes of DHA. Objective: The purpose of this study was to estimate Omega-3 (n-3) fatty acid intakes in colonoscopy patients and to examine knowledge and attitudes held about dietary fats.

Subjects/Methods: Men (n=32) and women (n=47) patients were recruited from a Midwestern gastroenterology clinic. A dietitian obtained informed consent, a food recall and response from a 152-item n-3 food frequency questionnaire (n-3 FFQ) at the clinic using visuals and food models. Two additional 24-h recalls, including a weekend recall, were returned by mail. A questionnaire measuring diet fatty acids knowledge, diet attitudes and beliefs was also obtained.

The purpose of this study was to develop an understanding of how adult participants describe quality of life during or after participation in the Expanded Food and Nutrition Education Program (EFNEP) at sites across the United States. The study analyzed success stories submitted by EFNEP staff and participants from sites in nine states from the years 2004 to 2010. A total of 1,057 success stories were analyzed.

Little information is available related to adolescent calcium intake and relationships with injuries they might suffer from sport participation. To determine calcium intake of high school athletes, to assess their self reported injury rates, and to examine the relationship between the two over a 12 month period of time. High density lipoprotein (HDL) is an atheroprotective element which is critical in the reverse cholesterol transport (RCT) pathway to eliminate excess cholesterol from the periphery of the body. A low plasma HDL cholesterol levels indicate a higher risk of getting cardiovascular diseases (CVD). Data for 685 children ages 6-11 was obtained from the National Health and Nutrition Examination Survey (NHANES).
