Physical activity can have immediate and long-term benefits on health and reduce the risk for chronic diseases. Valid measures of physical activity are needed in order to improve our understanding of the exact relationship between physical activity and health. Despite recent advances in antiretroviral therapy, nearly 37 million people continue to live with human immunodeficiency virus (HIV). Basic and applied research on the assembly of HIV could be enhanced by using a genetically tractable organism, such as yeast, rather than mammalian cells. While previous studies showed that expression of the HIV Gag polyprotein in Saccharomyces cerevisiae spheroplasts resulted in the production of virus-like particles (VLPs), many questions regarding the utility of yeast in HIV assembly remain uninvestigated. Twenty-two young men and women of the 49thMilitary Police Brigade of the California National Guard were participants of our nutrition education and health assessment program. The California National Guard has expressed concern of unsatisfactory physical and nutritional status of their personnel related to a nutrition knowledge deficit as evidenced by preliminary data of insufficient dietary intake and poor nutrition knowledge assessment scores. As keeping backyard poultry rises, human contact with zoonotic pathogens will increase. One such pathogen that backyard enthusiasts have exposure risks to is Salmonella spp. which may cause a potential public health threat due to its increasing multidrug resistancy. Salmonella spp. were present in 33 of 50 samples collected from 29 sites with backyard poultry coops in San Luis Obispo County during March to May in 2014. In athletes, performing BC assessments helps gauge training and nutrition programs to see if they are adequately meeting the athlete’s needs to improve performance. As of January 2017, the U.S. poultry industry banned the use of antibiotics and now relies on alternatives such as probiotics to help protect animal health. Although probiotic use is not a new concept in the poultry industry, identifying the best combination of bacterial strains to generate an effective probiotic formula requires further investigation. Developing a tissue-engineered Blood Vessel Mimic (BVM) to represent diabetic macrovascular disease could expedite design of new vascular devices specifically tailored to diabetic patients. In contribution toward this model, this thesis assessed Human Umbilical Vein Endothelial Cell (HUVEC) responses to high glucose conditions. Interleukin 6 (IL-6) and Cluster of Differentiation 36 (CD36) were selected to signify oxidative stress activity, a hallmark of diabetic macrovascular disease. Recent pharmaceutical developments have investigated using supramolecular nanoparticles in order to increase the bioavailability and solubility of drugs delivered in various methods. Modification of the carbohydrate cyclodextrin increases the ability to encapsulate hydrophobic pharmaceutical molecules by forming a carrier with a hydrophobic core and hydrophilic exterior. Guest molecules are commonly added to these inclusion complexes in order to add stability and further increase targeting abilities of the carriers. One such guest molecule is adamantine combined with a poly(ethylene glycol) chain. The rate of overweight and obesity among adolescents aged 12-19 years has more than tripled since 1980, and disproportionately impacts low-income and marginalized populations. Reduction in adolescent obesity rates may result in decreased health risks, decrease healthcare costs, and increased quality of life. Effective intervention methods for adolescent participants have incorporated nutrition knowledge and culinary skill building into afterschool programs. This study examines whether building knowledge, skills, and confidence through a culinary intervention can improve adolescent participants’ choices of healthful foods through increased fruit and vegetable intake.

Purpose: Moderate-intensity aerobic exercise (MAE) has been shown to elicit improvements in cognition and subsequent academic performance among preadolescents. Aerobic exercise has also shown to increase cortisol release in response to increasing exercise intensity. However, it is unknown if increased cortisol levels following exercise are related to acute improvements in executive function following a bout of MAE in preadolescents. The purpose of this study was to examine the potential effects of increased cortisol release after acute MAE on attention and working memory among preadolescents.
