Many studies have focused on the soft tissue analysis of carnivores and have demonstrated a relationship between feeding biomechanics and feeding types. Herbivores and omnivores rely heavily on anteroposterior and helical movement of the mandible and teeth for the breakdown of fibrous foods resulting in a flat mandibular fossa while the function of the carnivore TMJ is different, as they need a much stable joint for ripping and tearing of the flesh. Mobile Produce Markets: A Strategy For Increasing Access To Fruits And Vegetables Among Low Income Urban Residents, Bi-Sek J. Hsiao

Mobile produce markets (MPM) are a community-based strategy to improve produce access in areas with few fruits and vegetables (FV) retail options. The purpose of this thesis is to assess the functionality of MPM in low-income urban neighborhoods. This thesis includes three studies. Study 1 investigates FV availability in areas around MPM locations (n=13). We found limited fresh FV availability in stores, but high prevalence of 100% juice, and canned FV and beans. Background: With increased obesity has come increased ready-made and fast food consumption and decreased homemade food consumption. Previous studies have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.

Objective: The objective of this project was to determine baseline SE and CF and the associations with dietary quality and body mass index (BMI) of youth enrolled in iCook 4-H.

Background Homeless individuals comprise about 1% of the American population with 1/3 of this particular population being women. And despite the potential for hunger, the homeless population has a similar prevalence of overweight/obese as other Americans. The Heartside neighborhood of Grand Rapids is a very low-income area of the city, inhabited by the poor and homeless. The Food Access in Michigan Project is studying the relationship between food insecurity and food environments in Michigan.

The effect of a high carbohydrate (HCHO) or high fat (HF) diet on time to fatigue and mood state was examined in the present study. Six untrained males, (mean age 26.6 ± 0.74) were randomly assigned to a high fat (HF) or a HCHO diet for seven days. Subjects performed an endurance test at 55% of VO2max following the diet. Time to fatigue and psychometric variables of the Profile of Mood States (POMS) were recorded.
