Enhancing Efficiency Of The Nutrition Education For Utah Refugees, Habiba Ali Nur

Refugees face many challenges related to obtaining and preparing adequate and culturally acceptable and desirable foods in their resettlement communities. These challenges often lead to risk of food insecurity and chronic diseases. A review of literature identified the existing delivery strategies and highlighted the need for nutrition education tailored to the refugees’ conditions. This study identified some of the barriers that refugees face, including the English language, transportation, finding items in grocery stores, availability of ingredients and equipment needed for cooking, affordability of food and budgeting. It also highlighted participants’ preference for having nutrition education.

Alzheimer’s disease (AD) is the most common type of dementia in the elderly, accounting for 60 to 80% of all dementia cases. It affects 5.2 million Americans and 44 million worldwide. This project examines the association between dietary patterns, erythrocyte membrane fatty acids concentration, and AD-related genes in systemic inflammation as indicated by serum C-reactive protein (CRP). All studies performed in this project used the data collected in the Cache County Memory Study (CCMS).

Introduction: Cystic Fibrosis (CF) is an autosomal recessive disorder with serious pulmonary and nutritional implications. Nutrition status has a direct affect on lung function and longevity. Screening patients for growth velocity makes it possible to identify patients at nutritional risk. This identification is the first step towards appropriate nutritional interventions. The current screening tool used for children and adolescents with CF is not reliable and leaves too much room for clinical judgment. It is for this reason that a new screening tool was developed. Hispanic Americans are the second largest ethnic minority group in the United States today, at 12.5% of the total U.S. population. They face considerable nutrition-related challenges, of which dietitians and other nutrition professionals who serve this population need to be aware.
