Correlation Between Browning Degree And Composition Of Importantturkish White Wine Grape Varieties, Mustafa Ümi̇t Ünal, Aysun Şener

This study was undertaken to investigate the correlation between browning degree and composition of important Turkish white wine grape varieties during the 2006 and 2007 seasons. Large seasonal and cultivar variations were found in all measured variables. The highest browning degree was found in the Narince cultivar in both years, followed by Emir and Sultaniye, with Narince being the most susceptible to browning and Sultaniye being the least. No correlation (P < 0.05) was found between browning degrees and cysteine, glutathione, polyphenol oxidase activity, or total phenolic contents. Effects of harvest year and variety on all measured parameters, except total phenolics, were statistically significant (P < 0.01).

In the present study, five different grapes varieties grown in Turkey were comprehensively characterized in terms of physicochemical properties, total bioactive content, antiradical activity, and volatile sugar compounds. Thermal degradation kinetics of anthocyanin in the selected grape varieties were also analyzed. All the bioactive compounds and antiradical activity varied depending on variety and grape part (skin, pulp, or seed). Higher amounts of total phenolics, total flavonoids, anthocyanin, and antiradical capacity were obtained from seeds. Fifty-nine volatile compounds were observed in the grape varieties. Turkish Journal of Agriculture and Forestry

Table grapes (Vitis vinifera) of the cultivar Shahroudi were coated with 0.5% or 1% chitosan and then stored at 0 °C for 60 days. Shelf-life qualitative traits including rachis and berry appearance and berry cracking, shattering, decay, browning, acceptability, and flavor were evaluated. Treated berries showed less weight loss, decay, browning, shattering, and cracking. Flavor-related factors such as total soluble solids (TSS), titratable acidity (TA), and TSS/TA ratio levels were higher in treated fruits; however, there was no significant difference between the fruits treated with 0.5% and 1% chitosan. This research was conducted to construct genetic linkage maps of Vitis (2n = 38) from grape populations (60 F_1 + 2 parents) of crossing of Italia and Mercan (Vitis vinifera L.) cultivars. RAPD reactions were performed using a total of 300 RAPD primers. The amplification products were scored from negatives as presence or absence. Only 59 loci for Italia and 55 loci for Mercan could be used for linkage analysis. Mapmaker/Exp.3.0 was used for genetic linkage analysis with multipoint ordering among markers at LOD >= 3.0 score. The effect of various physio-biochemical parameters on the water use efficiency (WUE) of grape varieties, rootstocks and budded vines was studied in 3 separate experiments at 3 levels of irrigation (100%, 50% and no irrigation) for 14 days of stress cycle. None of the varieties or rootstocks could survive beyond 4 days under the no irrigation treatment. Concentrations of indole-3-acetic acid (IAA), gibberellic acid (GA_3) and abscisic acid (ABA) were measured by gas chromatography (GC) in the berries of 3 grape cultivars having different berry set mechanisms to elucidate the possible relationship between endogenous hormones and berry set mechanisms. The results obtained showed that the levels of IAA, GA_3 and ABA in seeded Italia, empty seeded Çavuş and stenospermocarpic seedless Perlette changed during ripening. While Italia exhibited a hormonal pattern similar to that of Çavuş, Perlette showed a different IAA and ABA pattern compared to the other cultivars. Generally, IAA and GA_3 were high in the early …
