This qualitative study assessed consumers’ current methods of determining portion sizing of chicken products and examined their perceptions of how effectively three package designs communicate portion size. Everett M. Rogers’ Diffusion of Innovations (DI) Theory analyzes the characteristics of the consumer of the innovation (adopter) and the impact these characteristics have on adopting new innovations. The innovation in this study will be the prototype packaging. Focusing on Rogers’ adopter characteristics and defined proprietary consumer segmentation characteristics, this study will be pivotal for future package design projects targeting nutrition education.

This study sought to characterize perceptions of agricultural leadership programs in colleges of agriculture, food, life, human, or environmental sciences at 1862 land-grant institutions. Twenty-six academic programs were identified with a major, minor, graduate degree, specialization, concentration, or certificate in agricultural leadership. Programs were identified through analyzing the APLU and USDA NIFA websites, searching academic college websites, and contacting deans and departments heads. Objectives included identifying programs, describing the need for programs, describing evolution that has taken place within the discipline, describing faculty recommendations for future development and growth in the field, and examining why faculty believe programs are relevant. …

This paper examines a 300-hour fieldwork internship that took place during a summer semester at a local non-profit called the Food Education Project (FEP). FEP provided a practical and hands- on opportunity, which allowed for the knowledge gained over the past two years at the University of San Francisco’s Public Health Program to be put to public health practice. The University of Texas- Pan American has conducted a complete survey of campus trees in partial fulfillment of the requirements for membership in the International Society of Arboriculture Designation of Tree Campus USA. This tree inventory was accomplished with the help of students whom were trained by faculty and foresters. Other than the completion of the tree inventory, this thesis had two main goals; 1) valuate the ecosystem services provided by campus trees 2) create a unique service learning project that other institutions can model. Weedy rice (Oryza sativa L.) competes aggressively with rice, reducing yields and grain quality. ClearfieldTM rice, is nontransgenic herbicide-resistant (HR) rice introduced in 2002 to control weedy rice, has resulted in ALS-resistant weedy rice due to gene flow. Volunteers of ClearfieldTM rice (F2) accelerate the HR weedy rice evolution by acting as agents of gene flow. Weedy rice (89) collected from 11 counties in Arkansas were screened for resistance in a field experiment in Stuttgart (2011). Seventy-nine percent of accessions were resistant to imazethapyr and harbored S653N mutation. These HR weedy accessions were outcrosses of ClearfieldTM rice and weedy rice. …

Recently, sustainability and process-related label claims have gained immense popularity especially for meat products like chicken. Apart from providing consumers with required product information, these labels have an impact on consumer perception and purchase behavior. The University of Arkansas Division Of Agriculture’s Public Policy Center has educated Arkansas voters about statewide ballot issues for 10 years. The ballot issue education program, was evaluated during the 2014 election cycle to determine the program’s impact on voters. This descriptive study sought to describe program participants, to determine knowledge transfer of county agents, to describe knowledge acquisition of program participants, and to measure whether people who attended Cooperative Extension Service presentations made informed choices on Election Day. The two articles presented in this thesis used both quantitative and qualitative research methods to evaluate competencies among agricultural business students and agricultural sales professionals respectively. In the first study, students enrolled in the Fall 2014 agribusiness sales course at [State] University (n = 97), participated in a pre and post evaluation comprised of leadership assessments to determine the change in introversion and extroversion, task-oriented and relationship-oriented, and finally strength characteristics over the time period of an academic semester. Higher levels of physical activity requires increased fluid intake due to increased water losses via sweating. PURPOSE: To determine the effect of physical activity on hydration status and water intake. METHODS: This study involved 8 visits to the Human Performance Laboratory over 22 days. Body weight and urine measurements were taken every visit. Physical activity was assessed by the International Physical Activity Questionnaire (IPAQ), water intake by the Water Frequency Questionnaire (WFQ), and hydration status by urine osmolality (UOsm), urine specific gravity (USG), and urine color (UC). Objective: The purpose of this study was to evaluate whether a week-long SNAP Challenge completed by university participants influenced perceptions about poverty. Design: Pretest and posttest questionnaires measured changes in attitudes toward poverty after the SNAP Challenge using the Attitude Toward Poverty Short Form scale comprised of three factors: Personal Deficiency, Stigma, and Structural Perspective. Dispositional empathy was measured with the Interpersonal Reactivity Index and analyzed as a potential mediating variable of attitude change. The purpose of the present study was to examine perception differences of competence and enjoyment between learners using modified and traditional equipment, and the potential effects these factors could have on intent for future participation. The participants in this study were 123 children (65 girls, 58 boys) aged 7 to 17 years. Through a convenience sampling method, data was obtained through surveys measuring golf participation and self-perceptions concerning perceived competence, enjoyment and intention to continue participation. Although extensive research has been conducted to understand consumers’ knowledge of food safety risks, there is a lack of research on consumers’ knowledge, perceptions, and behaviors towards risks associated with locally grown, processed, and manufactured foods sold at farmers’ markets.
