Minority Student Food Insecurity In Higher Education, Joe Sevillano

The minority student population in higher education has been affected by food insecurity at a disproportionate rate. Several studies have captured some of the issues associated with the material deficit but fail to identify more in-depth contributing factors. Using the theoretical framework of intersectionality, the researcher examines the experience, interpretation, and navigation of food insecurity in a medium-sized university located in a major city on the west coast. The researcher interviewed three students that self-identified as having multiple minority identities and experiencing some level of food insecurity while pursuing a degree. This dissertation investigates how the implementation of a pedagogical innovation in the foreign language (FL) classroom enabled me to explore student engagement, autonomy and course satisfaction and understand preferred practices for FL development. The ‘flipped classroom,’ formally known as the ‘inverted classroom,’ has become ‘the’ new phenomenon in pedagogical innovations in the last few years (Jensen, et al., 2015). In a Flipped Classroom, direct instruction is moved out of the classroom and takes place at home, by means of reading text or viewing a video or a digital presentation. This is a study of student interactions and opinions regarding emotional support animals (ESAs) or service animals in on-campus residential housing. Specifically, this study was designed to garner the opinions of residential students who live in close proximity to an ESA or service animal but do not have one of their own, essentially the roommates of an approved animal owner. An online survey was distributed to students at Rowan University in Glassboro, NJ during the 2019-2020 academic year. All participants were enrolled students who resided in on-campus housing in close proximity to an ESA or service animal.

Neisseria meningitidis is the major cause of invasive meningococcal disease (IMD) (Peterson et al, 2018). Approximately 10-15 percent of IMD cases result in debility including neurological impairment, amputation, and death (Peterson et al, 2018). Outbreaks of IMD are sporadic and unpredictable. The incidence of IMD varies geographically, but serogroup B has become more prevalent in recent years. This dissertation is a quantitative study of campus food pantries located in public four-year colleges and universities in the United States. The research aims to explain relationships among campus food pantries and surrounding neighborhood characteristics affecting local food environments. There are two parts to the study: (a) the quantitative analysis through responses from a participant questionnaire; and (b) a case study analysis to accompany the quantitative analysis. The researcher identified three metropolitan counties within U.S. census tracts, to determine the relationship between neighborhood demographics, the local food environment, and the impact on campus communities.
