This capstone project serves as an important piece of greater project studying bison handling. Bison production is both a growing and dangerous industry. As a new enterprise in many parts of the country and on tribal lands, significant numbers of untrained employees may be hired. This project undertakes methods to better understand the risks associated with bison handling and to thereby improve handling procedures and increase safety. Background: The Hispanic population is the largest growing minority ethnic group in the United States today. Minority groups have an added struggle with obesity and have higher rates of obesity in this country than the caucasian counterparts. While minority group parents want more for their children they face many cultural and language barriers related to proper nutrition and hydration. The increased use of technology has lead to a decrease in physical activity engagement by elementary aged children, and children are often unaware of how a sedentary lifestyle increases the risk of childhood diseases and illnesses, such as obesity and diabetes. In order to increase understanding about the importance of physical activity, I designed a two-day curriculum on the benefits of physical activity and presented it to a class of third grade students at Natividad Elementary School in Salinas, California.

Athletes in combat sports undergo rapid changes in body weight prior to competition in order to gain a size advantage over their opponent. However, these large weight changes with concomitant high-intensity exercise training create poor lipid profiles and high levels of oxidative stress, which can be detrimental to health and sport performance. Therefore, the purpose of this study was to investigate the ability of the nutritional supplement octacosanol to combat the physiological detriments that occur in taekwondo players during rapid weight loss with high-intensity exercise training. LGBTQ youths report less satisfaction with their sex education curriculum than their heterosexual counterparts. The discrepancy between heterosexual sex education and that of LGBTQ is alarming. Currently, as it is reported within the Unites States, students feel as though LGBTQ sex education and resources are not readily available. A brief handout of LGBTQ inclusive practices was created for educators to reference when creating future lesson plans. The aim of this presentation was to create a more open and inclusive dialogue surrounding LGBTQ+ health.
