Although academic research surrounding the topic has increased, there is a disproportionate increase in materials created for the athletes themselves. In this thesis I argue that improving diet in communities depends on building nutritional knowledge. In examining the role of community level organizations, I look specifically at how knowledge is conveyed through agriculture and gastronomy. This project analyzes how civil society organizations work to reintegrate individuals into food systems, compelling consumers to take agency over their diets and pursue better livelihoods. The industrialization of food systems has fundamentally changed the way humans connect with food and diet. Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Although it appears likely that the profoundly asymmetrical political and economic relationship between the United States and the Republic of the Marshall Islands (RMI) has contributed to the abandonment of traditional agriculture, import-dependency, and a decrease in quality of life for the citizens of the RMI, limits in existing quantitative data make it impossible to model exactly how this occurred. Therefore, rather than seek to model this causal relationship, the researcher employed three existing ethnographic studies to establish a quantitative measure of the transformation itself. This study will focus on how maternal phosphorus status of beef heifers affects the growth and performance of their calves. Heifers have been offered free-choice mineral with either 0 or 4% supplemental phosphorus from 30 days after weaning until calving. A study by H. Hilfiker, a University of Arkansas honors student, investigated the effects of these treatments from 30 days after weaning until 60 days after the breeding season when heifers were confirmed to be bred or open. This study aims to evaluate the nutritional impact the COVID-19 pandemic has had on children within the U.S. by assessing how children’s nutritional patterns have changed due to the COVID-19 pandemic, determining how these changes are impacted by participation in school federal nutrition assistance programs, and exploring additional food-related barriers the COVID-19 pandemic has created for families. A cross-sectional survey of American parents was used to evaluate changes to their children’s nutritional patterns. The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.

Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Although the root is widely consumed, sweetpotato leaves (SPL) are often discarded and are only consumed in a few countries. In the United States, SPL consumption is limited to private gardens, particularly in the Southeastern United States. Not only are SPL a good source of nutrients such as vitamins and minerals, but they also contain polyphenol compounds including the caffeoylquinic acid derivatives and carotenoids such as lutein. This study examines the introduction of the Official Food Rules in 1942 and the formation of subsequent dietary self-analysis practices in Ontario curriculum and textbooks. Examination of the influences of nutrition science, Ontario education policy and politics, and Canadian health policies are combined with Foucauldian critical discourse analysis of selected classroom materials. The Grade 4 dietary self-analysis, based on the various forms of the food guide, from 1946, 1974 and 2011 are analysed and compared. Themes of truth, power and identity within this regime of truth are examined. The ordering of food in the Food Rules was a discursive event. …
