This study investigates current green restaurant certifications as well as developing a new more user certification. First, a fact finding investigation to find the most established and commonly utilized green restaurant certifications were compared. Second, a new green certification was developed. Third, chosen green restaurant certifications were compared. Lastly, the new green certification analyzed whether restaurants in the central Florida area utilized green practices. This qualitative inquiry explored the educational relocation experiences of AfricanAmerican families residing in predominately-White and northern Gwinnett County, Georgia, who relocated to pursue improved educational opportunities for their children. For poor families or African- American families with limited resources, school choice is determined largely by where one lives. Historical oppression at the local, state and federal level has encouraged the concentration of African-American families into segregated communities and segregated housing patterns (Massey & Denton, 1998; Rice, 2009; Squires & Kim, 1995), which are often associated with educational inequality (Royce, 2009). Research suggests that issues of environmental justice are not being routinely included in the curriculum of the K-12 classroom and that teachers in those grades do not feel prepared to teach it. Likewise, little has been written about the addition of these topics to higher education coursework, leaving the question of inclusion at this level of education as well. This apparent lacuna may point to at least one reason why K-12 teachers are neither knowledgeable about environmental justice nor prepared to teach it.
