Previous efforts to involve parents in implementation of childcare-based health promotion interventions have yielded limited success, suggesting a need for different implementation strategies. This study evaluated the efficacy of an enhanced implementation strategy to increase parent engagement with Healthy Me, Healthy We. This quasi-experimental study included childcare centers from the second of two waves of a cluster-randomized trial. The standard approach (giving parents intervention materials, prompting participation at home, inviting participation with classroom events) was delivered in 2016–2017 (29 centers, 116 providers, and 199 parents). The enhanced approach (standard plus seeking feedback, identifying and addressing barriers to parent participation) …

A Nutrition Survey Of Division Ii Athletes In Ohio, Zachary P. Ashley, David Jacques, Ellen Smith
Channels: Where Disciplines Meet
This study was an endeavor to delve into the discrepancies between nutrition knowledge, nutrition education, and the prevalence of these topics in collegiate athletes. Despite there being an extensive amount of research conducted on the impact on nutrition on athletic performance, there is often a lack of nutritional knowledge, among collegiate athletes (Abbey, et. al., Joint position statement). We used an electronically distributed nutrition survey (49SNKI) to assess the nutrition knowledge of Division II NCAA athletes in Ohio. When comparing participants based on whether they had completed a nutrition class or not, the research team found statistically significant differences in …
A “License To Kale”—Free Speech Challenges To Occupational Licensing Of Nutrition And Dietetics, Taylor J. Newman, Angela E. Surrett
A “License To Kale”—Free Speech Challenges To Occupational Licensing Of Nutrition And Dietetics, Taylor J. Newman, Angela E. Surrett
St. Mary's Law Journal
State licensing of medical professions has occurred for over a century. Recently, these licensure statutes have been subject to First Amendment challenges, alleging occupational licensure impermissibly restricts freedom of speech. This Comment addresses these free speech challenges, arguing occupational licensure statutes, at least for medical professions, only incidentally impacts free speech—if at all—by permissibly regulating medical professional conduct necessarily requiring speech. Within, the authors ultimately describe, demonstrate, and recommend a legal framework, the other factor/personal nexus approach. This approach helps determine the point at which speech becomes regulable professional conduct subject to licensing, utilizing the nutrition and dietetics profession, and …

Nutrition Education Intervention For Children In Low Socioeconomic Neighborhoods, Archana Menon, Kasmier Viciosi, Joshua Nsubuga
Rowan-Virtua Research Day
Childhood obesity is a public health epidemic affecting 18.5% of children and adolescents in the United States. Children who are obese are more likely to obese as adults. Obesity leads to a number of comorbidities including chronic conditions like high blood pressure, Type II diabetes, and heart disease. Low socioeconomic status (SES), lack of healthy food access, and urban neighborhoods have been associated with childhood obesity. Additionally, convenience stores and other low-price stores tended to display and promote junk foods by the main entrance, whereas supermarkets and higher-income stores tended to display fruits and vegetables. We want to combat these …
Omega-3 Fatty Acid Fortification Of Marinara Sauce, Hannah Collie
Omega-3 Fatty Acid Fortification Of Marinara Sauce, Hannah Collie
Undergraduate Honors Theses
In westernized culture, there is a deficit of healthy fats in the average person’s diet. Decreased intake of omega-3 fatty acids has been correlated to many different conditions such as cardiovascular disease, cancer, and chronic inflammatory issues. The “Mediterranean Diet” has been proposed as an ideal way to combat these issues. This diet promotes fish as a protein source and as a way to increase intake of essential polyunsaturated fatty acids. Due to location and dietary trends, fish is less often the main component of Northeast Tennessee's diet. This study investigated ways to fortify a more commonly consumed food in …
Preceptorship Within Accredited Nutrition And Dietetics Programs: A Pragmatic Mixed Methods Study, Angela K. Brekken
Preceptorship Within Accredited Nutrition And Dietetics Programs: A Pragmatic Mixed Methods Study, Angela K. Brekken
Dissertations, Theses, and Projects
The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.
Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Quantitative analysis through SPSS included descriptive statistics (means and standard deviations) and inferential statistics (one-way ANOVA). Qualitative data for both …

The Importance Of Nutrition And Preventing Malnutrition In Older Adults: A Literature Review And Informational Booklet, Sophie Johnson
The Importance Of Nutrition And Preventing Malnutrition In Older Adults: A Literature Review And Informational Booklet, Sophie Johnson
Honors Theses
Over years of studying nutrition science and gerontology, there was very little information in classes that combined these two important topics. Older adults are often classified as those above the age of 65 years old. There is a growing number of older adults in the United States, which increases the need for information on how nutrition and aging are interlaced. As humans age, multiple factors can impact nutrition. Nutrition involves consuming the proper amount of nutrients to maintain body function. There are physiological, physical, socioeconomic and medication factors that can all influence nutrition status. It is important to be aware …

Infertility affects nearly 50 million couples worldwide, with 40−50% of cases having a male factor component. It is well established that nutritional status impacts reproductive development, health and function, although the exact mechanisms have not been fully elucidated. Genetic variation that affects nutrient metabolism may impact fertility through nutrigenetic mechanisms. This review summarizes current knowledge on the role of several dietary components (vitamins A, B12, C, D, E, folate, betaine, choline, calcium, iron, caffeine, fiber, sugar, dietary fat, and gluten) in male reproductive health. Evidence of gene-nutrient interactions and their potential effect on fertility is also examined. Understanding …

Internet Journal of Allied Health Sciences and Practice
Purpose: The purpose of this study was to describe student perceptions of their learning following experiential learning (EL) activities in a foodservice management course. Nutrition and dietetics education programs have a range of competencies students must learn and demonstrate throughout their curriculum. Learning styles differ amongst students and research has demonstrated they prefer to engage in EL (direct experience) activities to develop their knowledge. Foodservice management is one area of the curriculum that teaches students the basic functions of management; planning, organizing, directing, controlling, and staffing related to food, materials, facilities, and human resources. While this can be taught didactically, …

Fat mass (FM) gain and lean mass (LM) loss are common side effects for patients with prostate cancer receiving androgen deprivation therapy (ADT). Excess FM has been associated with an increased risk of developing obesity-related comorbidities, exacerbating prostate cancer progression, and all-cause and cancer-specific mortality. LM is the predominant contributor to resting metabolic rate, with any loss impacting long-term weight management as well as physical function. Therefore, reducing FM and preserving LM may improve patient-reported outcomes, risk of disease progression, and ameliorate comorbidity development. In ADT-treated patients, exercise and nutrition programs can lead to improvements in quality of life and …
