This thesis brings together two studies of local food systems in Vermont and New England. The first study focuses on the experience of Vermont local food businesses during the Covid-19 pandemic by combining two surveys conducted in the first half of 2021: one of foodservice operations that procure food locally and one of Vermont farms that sell directly to consumers. We analyzed descriptive statistics, open responses, and conducted Kruskal-Wallis rank sum tests to assess which factors were related with business’ financial status before and since the pandemic. Harvesting the sap of maple trees [Acer saccharum] for use in the production of syrups and sugars has a storied history stretching back to the pre-Columbian practices of North America’s indigenous peoples. Since its adaptation by European settlers in the late seventeenth century and into the present day, the production of maple syrup has become especially integral to the livelihoods and cultural identities of farmers in Vermont. This project utilized a mixed-method needs assessment approach to urban agriculture in Arkansas, a predominately-rural state. Chapter II was a qualitative study, using semi-structured, in-depth interviews, that investigated the perceptions, needs, and experiences of Arkansas urban farmers and their interactions with the University of Arkansas Division of Agriculture Cooperative Extension Service (CES). Interviews were conducted with 16 urban farmers in Northwest and Central Arkansas. The interview data revealed individualized needs based on the size, years in operation, and mission of each urban farmer interviewed. The purpose of this study is to identify and describe the barriers that prevent local food producers from selling their food in a mainstream market. This study utilized both qualitative and quantitative analysis through a mixed-methods survey. Information collected through the study had a two-fold focus: barriers that producers face (or that they are providing assistance for) and what are consumers looking for in products that these producers are supplying. The major barriers found for local food producers in Arkansas were lack of capital and obtaining infrastructure for packaging, processing, and storing products. Expenditures on locally grown food products are only a small portion of the total food expenditures in the United States. In order to find a way to increase this percentage, this study aims to identify various types of buyers currently participating in the purchase of locally grown food products. Buyers were divided into two groups: institutions and intermediated. A comparison of for both classifications of buyers was done to find the difference in their perceived barriers and requirements for purchasing local food. School gardens have existed since the late nineteenth century and today are becoming increasingly popular in many parts of the world, including where I studied in Maine and Australia (AUS). Multiple organizations support school gardens in Maine, including the Maine School Garden Network, which has over 125 registered school gardens. In AUS, the Stephanie Alexander Kitchen Garden Foundation primarily supports the school garden movement and has over 800 registered school gardens. The vast majority of earned agricultural dollars in Vermont come from the dairy industry, but with volatility in the market in recent years, including rising costs of feed and the fluctuating price of milk, state officials have begun to recommend diversification of farm activities to instill resiliency into the system. The research presented in this thesis explores two avenues for diversification, farm-to-consumer sales of raw milk and local beef production.

This dissertation examines a movement in Western North Carolina to build a local food system, one grounded in the conditions and relationships of place. In 2000, Mountain Family Farms launched the Local Food Campaign to raise public awareness about the region's farms and farming heritage, to educate consumers about the benefits of buying food grown by local farms, and, ultimately, to build markets for locally grown food to sustain the region's farms.
