Edamame [Glycine max (L.) Merr.] a vegetable type soybean is harvested and consumed before reaching its maturity stage (R6). Its health properties drew attention to U.S. consumers because of its high protein content. Proteins are the major structural component of all cells in the living organisms. The demand for poultry and swine production has grown continually as the world population increases. There will be an estimated 8 billion people to feed in the world by 2025. Soybean meal is the most important plant protein ingredient for poultry and swine feedstock. Globally, the US produces 32% of the world’s soybean. Although soymeal is nearly a complete plant protein, it is highly supplemented with sulfur-containing amino acids such as cysteine and methionine.
