African leafy vegetables (ALVs) are a diverse set of crops grown across sub-Saharan Africa. They have been a staple of traditional diets and contain many critical micronutrients but their importance has been largely ignored by researchers and policymakers at the expense of imported crops. Availability, accessibility, and utilization of ALVs are limited by factors across the supply chain. This research investigated seed systems, drought tolerance, hydroponic production, market barriers, consumer preference, and the impact of gender as related to ALVs. This project is made up of three distinct parts: a communications report from the 2016 UVM Food Systems Summit, a discourse analysis that uses the Summit as a text, and a narrative essay addressing the 2016 Summit's core question, "What Makes Food Good?" The three parts come together to form an analysis of communications within the discipline of food systems, one which grapples with emergent themes and issues in the field.

Milk production has played an integral role in the culture, landscape, and economy of Maine’s agriculture. Maine dairy farmers have faced numerous sustainability challenges to economic, environmental, and social aspects of their industry. Like many other complex social ecological systems, the Maine dairy industry faces a gap between scientific knowledge and actionable management or policy. As the American public school system is currently designed, the average student is likely to graduate high school without ever having received any formal instruction regarding the food system in which he or she takes part as a consumer. Such instruction was not necessary up until the current era of separation between consumers and food production. Through this research project, I sought to demonstrate the effectiveness of a single introductory lesson on the issues confronting the modern American food system, which I taught to two high school biology classrooms.
