Food insecurity is a problem in the state of Maine, with recent data concluding that just under 150,000 Maine residents were food insecure. In a state with 155 farmers’ markets during the summer growing season, an intersection between the local food movement and food security efforts may prove fruitful in increasing access to nutritious and healthy food for low-income Mainers. While farmers’ markets are typically associated with an air of exclusivity, they have the potential to provide access to the fresh fruits and vegetables that are often lacking in food-insecure households. The Use Of And Interest In Ancient Grains In Northeastern Institutional Kitchens, Jg Malacarne, Cheryl Bilinski, Bruce Wyatt, Kevin Leavitt

We report on a survey of institutional kitchens in the Northeast, seeking to better understand the extent to which institutions currently use locally produced grain products and what barriers they face in increasing their use of local grain products. We focus additional attention on local, organic grains, and ask specifically about a set of “ancient” grains: barley, einkorn, farro, rye, and spelt. Results indicate that current use of these products is extremely low. Familiarity with the grains in question, both by kitchen staff and their customers, emerges as a first-order barrier to expanding use of ancient grains in institutional kitchens. …

AquEOUS Fellowship. The inaugural summer of this new USDA fellowship program welcomed six undergraduate students to Orono from UMaine and four other U.S. colleges and universities. Over the course of 10 weeks, they approached aquaculture projects with "two-eyed seeing," incorporating local indigenous perspectives. The program took them to some of Maine’s most beautiful field settings, including the Center for Cooperative Aquaculture Research, the Darling Marine Center, and the Hurricane Island Center for Science and planning the program for next summer’s larger cohort! After reviewing their business plan and speaking with a representative, I identified two challenges that the LACM may face—building community infrastructure around their program and effective communication. Eight Projects through The University of Maine and partners receive federal funding from NOAA Grant Awards. NOAA has allocated over 2.9 million dollars to UMaine and other partners for the Fiscal Year 2022 from three different NOAA grant programs: Sea Grant, Saltonstall-Kennedy, and the Atlantic States Marine Fisheries Commission. Recipients include the University of Maine’s Aquaculture Research Institute (ARI), University of Maine Center for Cooperative Aquaculture Research (CCAR), Maine Sea Grant, and Maine Aquaculture Innovation Center (MAIC) based at UMaine’s Darling Marine Center.
